culinary school flashback: open house

l’academie de cuisine open house

This past saturday, we headed into the kitchen to make up a day we will miss during the week of Thanksgiving. It just so happened to be the saturday of an open house as well. To make this extra special for us, we were allowed to invite our family and friends to come hang out for a little while, see the school and taste our food. D and my little sister came out to support me.

We were divided up into teams and tackled some dishes to present during the open house. We made:

  • LE COQ AU VIN to go along with rice pilaf and mashed potatoes, which Nick and I made with lots of butter, cream and cheese
  • Smoked salmon crostini
  • RATATOUILLE stuffed into a PATE CHOU. A pastry that is piped into a small balls that rise during the baking processes
  • Omeletts made a la minute
  • PISSALADIERE – Onion tart topped with olives and anchovies Salad with a simple vinaigrette
  • Egg rolls (which Bobby and I were in charge of frying)

We served all the food buffet style and even had a chance to hang out with our families for a little bit. I had a blast showing off the school, my new friends and cooking abilities to my family.

Here are a few pictures from the day – sorry there are no pictures of the food. I left my camera at home and D and my sister were in charge of taking photos, but I forgot to ask them to photograph the food:
