my week in food
Weekends tend to be unplanned as food goes, since I never know what we’ll be up to. Because of that, we had leftovers Saturday during the day and ordered this amazing pizza from our favorite local pizza shop 🍕 after L was asleep.

With the two weeks at the beach, and my parents visiting, this weekend was filled tons of to dos around the house. I still had a batch of mac & cheese in the freezer, that I made a few weeks ago, which made for a perfect dinner Sunday.
L requested shrimp for dinner on Monday, so I paired it with a creamy Old Bay sauce, some rice and roasted broccoli and asparagus. It doesn’t look all that great, but I’ll tell you that there were ZERO leftovers!
It literally rained all day long on Tuesday, so what better way to start it off then with some strawberry oatmeal.
We also had some friends over for a playdate, so we of course had to take that opportunity to whip up a marble cake, right ;). It was so moist, which often doesn’t happen with marble cakes, so I ate way too much cake, haha.
Lunch was a quick leftover stir fry with broccoli, mushrooms, spaghetti and carnitas. Now that I am typing that, it sounds super odd but it was yummy. L even explained at lunch “Mama, this is a great lunch!”
I made coq au vin on Wednesday, which I LOVE!! Despite how easy it is to make, I never make it enough. Since it requires bacon, I figured I’d portion out what I needed for the dish, and fry up the rest. Having not had a BLT in ages, this was the perfect opportunity to whip one up … NEVER a bad lunch 😉.

We had a girl cousin sleepover last night, since my nephew had a late scrimmage up in Baltimore. And let’s be honest, do you ever really need a reason for a sleepover with your best friends?!
Well, I couldn’t just serve them cereal in the morning, right 😉? Only problem was, I didn’t decide to make cinnamon rolls until after the girls were in bed, and I didn’t feel like spending ages in the kitchen. So I did a quick google search, found this recipe for cinnamon rolls in under 45 minutes and decided to try it. I did change the recipe a tad, using all milk and no water for example, but it was super easy and turned out great!
Tonight, and most of the weekend, will be leftover dinners and Labor Day celebrations with friends.
