my food in week: eclipse edition

Saturday for lunch I had zero plans on what to make. I made pesto from all the basil in my garden last week, so I threw that in a pan with some cream and peas, tossed with pasta and voila, easy lunch. L had requested a smoothie, which I always love 😊.

Saturday afternoon we met hubby’s mom in Ellicott city for a quick visit. We of course started the trip off with ice cream 😉 – black cherry chunk for me was delicious!!

We had dinner at Manor Hill Taver. Hubby and I shared general Tso chicken wings and a Hawaii pizza. I didn’t love the food, but have a feeling it was a pregnancy problem, not the foods fault.

Sunday I decided to keep it lighter with some plain yogurt, fruit and homemade granola.

Monday was the big eclipse 🌘!! I couldn’t pass up these awesome cookies to snack on 😉.

On Monday my sister treated everyone to sushi 🍣! Eating it while pregnant is not as much fun, since I have to opt for the cooked stuff, but this caterpillar role was amazing!!

Tuesday I kept it light during the day, since I had plans for a girls night of sushi again 😝. The only pictures I snapped was a bowl of cherries and our incredible sushi boat! So that hubby and L also had some food, I made a quick pizza dough for them to whip up together 🍕.

The menu for the week was super simple, so Wednesday I made some biscuits, and D grilled chicken kabobs and corn. Along with some peppers and fruit, it was the perfect summer dinner. We also ate outside, since it’s nice and cool here right now with low humidity 🙌🏻.

No idea why, but I was craving spaghetti and meatballs, so I whipped up these delish meatballs, with a hint of lemon. They were juicy and sauce had a tiny kick, at least for my pallet 😝.

Friday I threw a pork shoulder in the crockpot to make carnitas. I served them with these easy tortillas and all the fixings 🥙😍.

We have a nice amount of leftovers for the rest of the weekend, giving me a break in the kitchen 😉.
