grilled corn, pea and edamame salad
While my parents are in town visiting from Germany, we had an impromptu family BBQ. I was asked to bring a salad, and had planned on bringing just a boring green salad. However, my mom mentioned me doing something with beans or rice, aka something more exciting, so the wheels started turning in my head.
Since corn is still in season, I figured a grilled corn salad would be delicious. I knew I wanted to add some red onions and peas, and while getting frozen peas, I noticed the edamame. A little lightbulb went off, and I thought, ‘hey, why not? That could be good, right?” And so this salad started to take shape.
I almost made a creamy dressing to go along with this salad, and then thought about keeping it a bit healthier. I also figured if the kids saw a creamy dressing, they’d never touch it 😋. So I just topped it with a simple lime, olive oil dressing.

This salad is super easy, just requires a tiny bit of work with the grill and blanching veggies.
One of the best parts of this salad is that it’s been kid approved, and not just by my kid 😉.
Notes
This is a great salad to make ahead and keep in the fridge for a day or two.
You can easily substitute a goat cheese for feta cheese.
Depending on how juicy your lime is, you may need to add more or less olive oil. Just play with the dressing, to give it the consistency that you desire. Adjust seasonings accordingly.
Ingredients
- 4 ears of corn
- 1 small red onion
- 1 cup peas, frozen
- 1 cup edamame, frozen
- 4 oz feta cheese
- olive oil
- salt
- pepper
For the dressing
- 1 lime, juice and zest
- 1/8 cup +/- olive oil
- salt
- pepper
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 4 mint leaves
- 4 roasted garlic cloves (optional)
Instructions
- Preheat the grill. Shuck the corn and cut the onion in half, leaving the root in tack to prevent it from falling apart on the grill. Toss with olive oil, salt and pepper. Place on the grill and get a nice char on all sides. Cool completely.
- Blanch the peas and edamame. This is done by bringing a pot of water to a boil, adding a liberal amount of salt and then adding the peas and edamame. After 30 seconds to a minute, transfer peas and edamame into an ice bath.
- Dice the onions and remove corn from the cob. The easiest way to do this, is to lay the corn on your cutting board, and cutting along the side. Turn and repeat on the other three sides.
- Make the dressing by combining all ingredients in blender and blend together until smooth. Depending on how juicy your lime is, you may need to add more oil.
- Toss all vegetables and feta cheese with dressing, toss and serve.
