pasta alla vodka
We love pasta! I mean, who doesn’t, right? The only problem is, we tend to eat the same pasta dishes, over and over again. So I decided to make pasta alla vodka for us, just to switch is up a bit. I didn’t have Penne in my pantry, so I used Rotelle pasta.
Have you ever googled ‘penne alla vodka’ recipes? I was shocked to find most don’t even have vodka in them. What’s the point of that, right!? Well not my recipe 😉🍸. However, we don’t normally drink hard liquor in our household, so when it came to making this recipe, I needed to run to the store to grab some. Only ‘problem’ was, being 22 weeks pregnant, and always having a toddler in tow, I felt might awkward walking into the liquor store! I did that thing where you justify yourself to perfectly stranger, you know what I mean? I immediately told the two young guys behind the counter, that I need some vodka to cook with, haha. Not sure why I felt the need to do that, but hey, I walked out with a small brown bag.
Of course I started the whole thing off with beacon, because, why wouldn’t it? BUUUT, if you don’t eat meat, just leave it out, it’ll still taste delish. Don’t mind the little hand in the photo, Lena wanted to get in on the cooking action 😉.
Little tip when a recipe calls for minced garlic, use a microplane!! It’s suuuper easy and fast 😉.
I absolutely love how simple this recipe is, yet it’s a crowd pleaser. Okay, that’s all I’ve got. Now go and whip up this quick dinner and enjoy 😊.
Ingredients
- 1 box Pasta, any kind you like
- 2 strips of Bacon, cut into small pieces
- 1 small Onion, small dice
- 2 cloves Garlic, minced
- ¼ cup Vodka
- 1 can Plum Tomatoes
- ½ cup Heavy Cream
- Salt & Pepper
- Parmesan Cheese for serving
Instructions
- Cook pasta per box instructions.
- Puree plum tomatoes in blender.
- Sautee bacon over medium high heat until crisp, then add onions. Season with salt and pepper. Adding salt during this step draws out the natural moisture of the onions, reducing the risk of burning them.
- Add garlic and cook for maybe 10 seconds before deglazing with vodka. As soon as you smell the garlic, add the vodka. Add tomato puree, season with more salt and pepper and simmer for 15 minutes. Add heavy cream and simmer for additional 5 minutes.
- When pasta is cooked and drained, toss with sauce, and top with lots and lots of parmesan cheese.
