I am going to my first ever christmas cookie exchange tomorrow 🎄🍪🎅🏼😊. I thought I’d bring along one of those dump all the ingredients in a bowl cookie dough recipes, that are super easy to whip up, yet everyone raves about it.
And let’s be honest, I didn’t have that much time today to whip up a bunch of cookies, so this recipe was perfect to whip up 50 cookies in under an hour!! Oh and, it’s easy enough that my 3,5 year old pitched in and helped out!
If you’re still baking cookies for this weekend, here is another quick recipe to add into your lineup. I may or may not be keeping half of them for myself, since as a German, we do coffee and cookies every afternoon during the Christmas season 😝.
Ingredients
- 2 sticks Butter, room temperature
- 3 ¼ cup Flour
- ½ cup Sugar
- 3 Eggs
- 1 Lemon, zested
- 4 cup shredded Coconuts, divided into 1 cup and 3 cups
- 1 tsp Vanilla Extract
- Salt
Instructions
- Mix butter, flour, sugar, eggs, lemon zest and salt until it’s a smooth dough. Add coconut and vanilla.
- Place the rest of the shredded coconut in a bowl and set aside. Roll cookie dough into small balls (½ tablespoon size), cover with shredded coconuts and place on cookie sheet. Dough will not spread, so you can place them ½-1 inch apart.
- Bake in 350-degree F preheated oven for 15 minutes. Immediately press down with the back of a spoon and cool completely.
