Christmas Stars with Lemon Curd
I was planning on baking christmas cookies with my little girl today, but since she’s been banished to the couch with a fever, I figured I’d play around with the cookie doughs I had prepared and get a little fancier 😉.
These lemon curd filled christmas stars turned out divine and I can’t wait to share them with everyone this Christmas season! My hubby has a work potluck next week, and naturally he asked me if I cook make him something to bring in. I think some of these cookies will be send in for sure.
Don’t be intimidated by the work involved, because they actually are less complicated than they look. I promise ☺️!

PS: the cook time is per batch, while the prep and assembly time is for all cookies!
Ingredients
- 1 ½ cups (350 g) Flour
- 1 cup (250 g) Butter, soft
- ½ cup (120 g) Sugar
- 1 Tbps Vanilla Bean Paste OR 1 Tsp Vanilla Extract
- 1 Lemon, zested
- 1 Egg
- Salt
- 1 cup (300g) Jar Lemon curd (or homemade)
- ½ cup Powdered Sugar
Instructions
- Place everything into a bowl and work with your hands until it is a smooth dough (or throw it all into a kitchen machine). Cool for at least an hour. I made mine the day before
- Preheat the oven to 350-degrees F (200-degrees C). Roll out the dough on lightly floured surface - It will most likely be very crumply and fall apart. This is okay and normal, just keep working with the dough until it comes together. Be sure to add more flour if needed so it does not stick to the counter.
- Using two different size cookie cutters cut out your stars. Remember, you will need to cut out the center with a smaller cookie cutter out of half of the cookies. Oh, and don’t toss the little starts your cut for the top layer. Bake those and they make perfect little cookie bites.
- Bake for 12-14 minutes, until golden. Then cool completely.
- To assemble the cookies, spread about 1 tsp of lemon curd on a full star, top with a cut out star and sprinkle with powdered sugar.
