This recipe is truly delicious. The layers of flavors come through in every bite. If anyone is doubting the addition of the lemon, don’t. It’s what sets this recipe aside from all the others . It adds an incredible pop of freshness to the over all sauce. Instead of 1 lb each of beef and sausage, I used 1 lb of beef and 1/2 lb each of sausage and veal. Thank you so much for sharing this recipe.

Hi Marie! I don’t take the skins off because it doesn’t bother me to have them on, but you could definitely remove the skins if you want!

I love your bolognese recipe — I’ve been making it for myself and for others the last few years so I don’t understand why the overall ratings for this recipe aren’t higher! Your recipe also inspired me to take a bolognese class in Bologna last month! And I had a quick question — you mentioned the addition of lemon was a recommendation from a Florence chef. Is the use of nutmeg also something that they did in Florence? Thank you so much!
