I know, this is a recipe that should be posted next spring when everyone goes lemon curd crazy, but I decided that it would be fun to post asap since it’s a blender lemon curd! That’s right, that picture I posted on instagram of the girls and I experimenting with making lemon curd in our Blendtec totally worked and it was the easiest lemon curd I’ve ever made!

I did overcook it a little, but that’s just because I was still so sick and trying to help the 9 year old do it from a chair so I couldn’t see things as well. I still snapped a few pics because she did such a wonderful job. It’s amazing how much a 9 year old can do. I need to remember that and while I don’t want to make her grow up too fast, especially with a baby on the way (it’s easy as more kids come to forget that the oldest is still in fact little) but I do need to let her do more on her own. I try to remember just how much kids on ranches and farms used to be responsible for. They are smarter and more capable than we think. I’m the problem as a protective parent sometimes. How do you help your kids grow up responsible but not too fast?

Are Lemons Good For You?

Lemons are high in Vitamin C.

Lemon Curd and Lemon Pudding are actually different.

The way they are thickened is one of the differences.

Curd is usually eggs, lemon, butter, and sugar.

It has a rich buttery taste.

The texture is smoother and the flavor more intense.

Pudding generally has cornstarch as a thickener, and often includes milk as one of the ingredients.

Does Lemon Curd Have to be Refrigerated?

Lemon curd should be refrigerated.

Lemon curd, after opening, will keep 1-2 weeks in the refrigerator.

How Long Will Homemade Lemon Curd Last?

If place in a container with a tight fitting lid, homemade lemon curd should last up to 1 month in the refrigerator.

Blender Lemon Curd

Ingredients 

  • 1/2 Cup Butter, softened
  • 1 1/2 Cups Sugar
  • 3 Lemons, large, zested
  • 5 Eggs, large
  • 1/2 Cup Lemon Juice, fresh

Instructions 

  • In a blender pulse the butter, sugar and zest until combined.
    1/2 Cup Butter, 3 Lemons, 1 1/2 Cups Sugar
  • Add the eggs, one at a time then the lemon juice and blend until smooth.
    5 Eggs, 1/2 Cup Lemon Juice
  • Pour into a saucepan and cook over low heat, stirring constantly.
  • Use a thermometer to see when the curd hits 170 degrees, about 10-15 minutes.
  • The mixture should just be beginning to thicken. If you’re using it for a tart you may cook a little longer for a thicker curd as shown in the photo.
  • Remove from the heat and allow to cool then place in a jar, seal and store in the refrigerator to use for the next few weeks.

    Thank you for this recipe. I like lemon…but what can I use this for or with?

    Off the subject: I hope the new baby gets your beautiful eyes and your sweet spirit!

    I do not have child rearing advice. Mine were 2 1/2 years apart, so I was, very thankfully, able to spend individual time with each one. The only thing I can think of to say is: make sure you’re not overtired when it’s ‘this child’s’ turn to be with you. They say Daddy dates are great, but so are Mommy dates.

      Other than eating it with a spoon (I wont tell if you wont) you can use it on waffles, pancakes or crepes, in the middle of cake, or any of the recipes listed at the bottom of the post. 🙂 And thank you so much! That is so sweet of you to say. I love the advice of not being overtired. I feel like that’s going to be so important for us.

    Kids can do a lot of things without losing their childhood. Cooking is a fun activity with some preferring baking and some preferring to cook meals. It’s advanced play as long as you don’t over correct or expect perfection (evidently I did both so I don’t help my grandkids too much). Even chores can be fun with timed races or games made of them. Kids do need to learn that as they get older they’ll earn more privileges as they gain responsibility and knowhow. They’ll feel better about themselves when they know how to do the basics of cooking, cleaning and grocery shopping (and watch out on that one as my grandkids have been pushed aside at the delicounter for the adults to get served first and that isn’t right). I was baking cookies without help at 9. My grandmother needed to learn how to start a wooden stove when she tried making biscuits at age 5 and her mom was out on a midwife call and her dad was out doing chores on the ranch. We’d think that was a bit too young these days but 9 isn’t. Just keep it light and fun and teach all the basics. I have bought all my granddaughters cookbooks of their own and some tools. That makes it more like play too!
    I’ve never made lemon curd as just the curd. I’ve made lemon meringue pie though. Will have to try this.

      Exactly!! I love how well you put it. It’s so important for kids to learn these things, but not just so they can be an adult one day, also for the bonding, the growth and the self esteem gained.

    You can actually do it all in the Blendtec. I found a recipe for the Vitamix blender and used the Blendtec instead. It works great and I love that the zest and any cooked egg bits get liquified for a much smoother curd. Takes maybe 5 minutes to do from start to finish. It take longer to get the ingredients ready and in the container than it does to make it. And no stove or watching the pot required!

    I wish my kids would cook for me. 😉 They really grow up fast. Too fast for my liking! I wish they could stay little longer. Your 9 year old did a great job, the curd looks so yummy!
