How This Recipe Came to Be

Kerri here! This recipe came to life after a trip to a dessert bar shop here in Utah, where one bite of their brown butter Rice Krispie treat had me hooked. I knew instantly that nutty, toasty flavor was the secret, and my brain immediately went to, What if we added dulce de leche? Because around here, if dulce de leche is an option, we’re absolutely using it.

After a little experimenting, these Rice Krispie treats became layered with gooey dulce de leche and built on Carrian’s classic RKT base recipe. She tested them, photographed them, and confirmed what I already knew—they’re next-level good. She even tried a cinnamon sugar Rice Krispies version and now swears by it (which I clearly need to try ASAP).

These dulce de leche Rice Krispie treats have been a hit everywhere I’ve taken them. Every single time, someone asks for the recipe—and now I can just send a link instead of trying to explain how to recreate all that gooey goodness. Trust me, once you try them, you’ll understand the obsession.

Ingredients for Stuffed Rice Krispie Treats

You only need 6 ingredients and about 10 minutes to have these brown butter Rice Krispie treats ready to go! Here is what you will need…

How to Brown Butter

Browned butter is just butter that has been melted and cooked slightly. It has a delicious nutty flavor. It is super easy to make.

Cut your room temperature butter into similar sized pieces so that it melts evenly. I like to use a light colored pan so I can see the color of the butter and watch it change. Place the pan over medium heat. Stir the butter around to keep it moving while it melts.

As it melts, you will start to see foam and sizzling around the edge and brown flecks will appear on the bottom of the pan. Remove it from the heat immediately. It should be very fragrant. You have made browned butter!

Browned butter can become burned butter very quickly, so remove it from the heat as soon as you see the brown flecks.

Can I Use Regular Butter Instead?

Yes, for sure! If you don’t want that brown butter flavor (we probably can’t be friends…haha…jk!), just add the marshmallows to the butter as soon as it’s melted.

Tips for the Best Rice Krispie Treats

  • Line your pan with a parchment paper or a foil sling so the RKTs are easy to pull out of the pan when they cool.
  • Don’t skimp on the marshmallows or butter. The ratio of butter to gooey marshmallow is perfection and shouldn’t be changed. The result is a soft and chewy and heavenly Rice Krispies treat.
  • Don’t over cook the marshmallows. If they cook too long, they start to crystallize and then when they cool, they will be very hard. Cook over low heat…low and slow! You can also melt the marshmallows in the microwave using 1 minute intervals and stirring in between each 1 minute.
  • Use a huge mixing bowl and a wooden spoon to stir everything together. A large bowl gives you plenty of room to get everything combined well.
  • Don’t skip the extra marshmallows added in at the end. They create little pockets of chewy goodness that you don’t want to miss!
  • I like to spray the bottom of a measuring cup or a rubber spatula with cooking spray to gently press the mixture into the pan. There is no sticking and it makes that step super easy. I also saw a video of someone using the wrapper from the butter to press the mixture in by hand which I thought was genius!
  • I like to use a dough scraper to cut the Rice Krispie treats easily and evenly.

Brown Butter Dulce de Leche Rice Krispie Treats

Instructions

  • Spray a 9×9-inch pan with non-stick spray and line it with a foil or parchment paper sling.  Spray again.
  • Place a large pot on the stove over medium heat, add your butter and let it melt and then brown. *See notes below for browning butter.
    5 Tablespoons Butter
  • Once the butter is browned, remove from the heat and add the salt and 8 cups of mini marshmallows. Stir until everything is completely melted and smooth. If you need to put it back on the heat to finish melting the marshmallows, that is fine. You just don't want the browned butter to burn.
    ½ teaspoon Sea Salt, 10 Cups Mini Marshmallows
  • Once it is smooth, add vanilla and stir again.
    ¼ teaspoon Vanilla Extract
  • Measure out the rice krispies cereal in a large bowl. Pour the melted marshmallows over the rice krispies and mix well.  
    6 Cups Rice Krispies Cereal
  • Add in the remaining marshmallows while still warm.
    10 Cups Mini Marshmallows
  • Lightly press about half of the rice krispies mixture into your prepared pan (see note). Flatten it down so it is even in the pan and then spread the dulce de leche all over the rice krispies in an even layer.
    ½ Can Dulce de Leche
  • Top with the rest of the rice krispies mixture and lightly press it around until it is evenly spread into the pan. Let it set at room temperature until cooled.

Notes

  • We made this batch with Cinnamon Sugar Rice Krispies and it was amazing. If you can’t find them at the store, you could add 1/4 – 1/3 cup of cinnamon sugar.
  • Browning butter: Place a light colored pan over medium heat and add room temperature butter. Stir it gently as it melts. It will begin to foam and sizzle and then you will see little brown fleck forming on the bottom of the pan. As soon as you see those flecks, remove the pan from the heat. 
  • Using a spoon with a little butter on it will help you press the rice krispies into the pan without it sticking all over your hands.
Rice Krispie treats can be stored in an airtight container, at room temperature, for 2-3 days. Or they can be stored in the freezer for up to 6 weeks.

This is a recipe you’d expect from an Italian Nonna! (even though my grandma isn’t Italian). Perfect for cold nights, Sunday dinners, or anytime you’re craving a truly homemade minestrone that’s timeless.

Once a year we would visit my grandma, who became a widow far too early. It always made me sad to know how much she was alone, but gathering around her table brought so much light and joy into her eyes I knew she would be ok. In the winter, she almost always made a Minestrone Soup with pasta or potatoes. The house felt cozier when it was on the stove, and you were engulfed with the smell it as soon as you walked in.

She served it with garlic knots and salad, and we’d dip the bread straight into the soup, letting it soak up the warm broth before taking a bite. It’s usually hard to get kids excited about a bowl full of vegetables and beans, but this soup is different. We always finished it, and most of the time went back for seconds. Even now, Minestrone reminds me of sitting at her kitchen table.

It may look like a long list, but most of these ingredients are pantry staples. Grab some fresh produce, and you’re all set to start cooking! Trust me: this homemade version tastes better than Olive Garden’s.

For best flavor, add fresh parsley and parmesan cheese just before serving.

Don’t be afraid to use up leftover vegetables! Yellow squash, cauliflower, broccoli, and other veggies can be added along with the zucchini. Spinach, kale, fresh basil, and other herbs work beautifully, too. Just add them near the end of cooking so they just wilt into the soup, bringing both flavor and color.

  • 3 Tablespoons Olive Oil
  • 1 Onion medium, diced
  • 3 Carrots large, peeled and diced
  • 3 Stalks Celery diced
  • 1 teaspoon Kosher Salt
  • 1 Zucchini medium, diced
  • 4 Cloves Garlic minced
  • 3 Tablespoons Tomato Paste
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Poultry Seasoning
  • ¼ teaspoon Black Pepper
  • 6 Cups Chicken Broth vegetable broth is fine
  • 1 Can Fire Roasted Tomatoes 14 oz, diced
  • 2 Bay Leaves
  • 1 Can Kidney Beans 14.5 oz, drained and rinsed
  • 1 Can White Beans 14.5 oz, drained and rinsed
  • 1 Cup Green Beans chopped
  • Salt and Pepper to taste
  • ¾ Cup Elbow Macaroni or ditalini, OR 1 large potato peeled and diced (see note)
  • Fresh Parsley for serving
  • Parmesan Cheese for serving

Instructions

  • Heat olive oil in a pot over medium heat. Add the onions, carrots and celery, season with salt. Cook, stirring occasionally until tender.

  • Add the tomato paste and seasonings and sauté for another 3-4 minutes.
    3 Tablespoons Tomato Paste, 2 teaspoons Dried Oregano, 1 teaspoon Poultry Seasoning, ¼ teaspoon Black Pepper
  • Add in the chicken broth, fire roasted tomatoes, bay leaves and broth and bring to a boil.
    6 Cups Chicken Broth, 1 Can Fire Roasted Tomatoes, 2 Bay Leaves
  • Add the beans and reduce to a simmer and cook uncovered on low for 15-20 minutes.
    1 Can Kidney Beans, 1 Can White Beans
  • Return to a simmer and add the green beans then cook for another 4-5 minutes.
    1 Cup Green Beans
  • Season with salt and pepper and add the pasta for the last 10-15 minutes.

Color drenching is when you paint everything (walls, trim and doors) the same color, but there are some dos and don’ts of color drenching that you should be aware of.

When we first bought our home I was in love with all of the light. There are windows everywhere and although I knew there were a few changes we wanted to make, first and foremost creating an ensuite on the main floor, I didn’t want to do anything that would lose the light.

And then we built a wall. One thing always turns into another and as we stole space for a kitchen pantry we ended up in need of a half bath on the main floor. So we stole hallway space that was unused and created a powder bathroom.

But let’s get back to color drenching.

DO Color Drench Walls with Picture Frame Moulding

Choosing to color drench a room is a bold new trend that actually helps create a curated and sophisticated look. But, flat paint on flat walls can feel heavy.

✅ Do Color Drenching to highlight architectural details. Adding moulding helps to add depth and character to your room that takes things from boring to curated.

✅ Do Luxe Architectural Moulding to save you time, headache, and money. It is not worth the hassle we went through in our other rooms. We searched high and low for moulding and though online makes it look easy, it was out of stock everywhere. Finally I found Luxe and it was the BEST. DECISION. EVER. The moulding arrived completely ready for each wall with peel and stick capabilities. We had it up and completely ready for paint (for a small powder bath) in less than 30 minutes.

DON’T try to Color Drench Open Layouts

❌ It’s far too difficult to know where to start and stop certain colors, so don’t don’t spaces where one room leads into another.

✅ Do choose to do spaces that are single room spaces like bedrooms, bathrooms, offices and theaters. Walking into a room you couldn’t previously see is a jaw-dropping moment that creates fun and vibrancy in the home.

Do Add Wallpaper

✅ Color drenching and wallpaper are the peanut butter and jelly of the interior design world. Try adding the wallpaper between moulding, choosing an accent wall, or be bold, and do like we did, the ceiling!

We worked with Wallpaper Direct to locate a wallpaper we could not find anywhere and my friend even ended up doing her entire dining room in it! It is stunning and I’ve officially become obsessed with scrolling the site for new ideas. We went with the Pimpernel in Charcoal.

Do Large and Small Spaces

✅ Throw out the opinion that small spaces need light colors. That’s old news and totally not true. Color drenching can be in tiny spaces to large open spaces. It adds a cozy feeling without closing you in. The color we used is Night Train by Benjamin Moore.

Don’t Skip the Door!

❌ Do not leave doors the same as the rest of the house. Color drenching means literally painting everything. But what do you do about the door and the edge of the door? Paint the inside of the door the same color as the room and then pull the door open. If the door enters the room and you see the edge from inside of the drenched room that edge should be the drenched color.

The door edge should always be painted to match the color of the room the door swings into. You don’t want to see the other color when the door is shut AND you want the edge of the door to match the room it’s facing when the door is open! So you also have to look at the edge with the hinge, that color should match the hallway it now faces. Here’s a short video on color drenching doors.

Do Add Small Touches

✅ Do add wood, metals and other touches to break up the paint. We chose to buy these beautiful walnut shelves and then added actual brass railings to make them all the more special. Do not get sucked into the fake stuff online. It will break. It will look plastic or fake and it will not be worth your time and money.

We found the Brass Addict online and have quickly noticed that they are taking off more and more as the number one source for all things brass. In fact, stay tuned as you are going to see it show up in a very important way in another room in our house!!

Bringing Snack Friday Back

Every Friday we USED TO do “Snack Friday.” We USED TO be fun. We USED TO have the kids bring all of their friends over after school to devour the delicious treats and snacks.

And then they started to grow up more…and we got busy…and I got distracted…and life got really, really, hard as we faced some really, really serious things…and then this year happened. And I realized that at no point did Friday ever say we couldn’t be happy in the mud.

So, we are bringing back snack Friday and the kids and the food and all of you. The easiest way to merge back into the fun house? Peanut Butter Oat Cups are totally no bake and best of all, we make them with whatever we’ve got.

Sometimes it’s in muffin tins or rolled into balls. Sometimes I use dark chocolate and sea salt and other times white chocolate with a sprinkle of cinnamon sugar. Either way, it’s about gathering people in and this snack is perfect for a quick treat.

How to Make Peanut Butter Oat Cups

This no bake peanut butter dessert uses pantry-friendly ingredients and couldn’t be easier to make.

  1. Combine: Add all the ingredients except the chocolate chips to a medium bowl and stir until combined.
  2. Place in Muffin Pan: Place the oat mixture into the muffin cups lined with paper liners. It will make 8 cups so try to distribute the mixture evenly. Flatten the mixture as much as possible.
  3. Freeze: Place the pan in the freezer for at least 2 hours.
  4. Melt: Place the chocolate and peanut butter chips in a saucer and melt until smooth. Pour a spoonful or two over each oat cup and smooth it out.
  5. Freeze: Sprinkle with flaky salt and freeze for another hour.

  • 3 Rib-Eye Steaks 12 oz each, 1 ¼-inch-thick*
  • 4 Tablespoons Olive Oil
  • Kosher Salt and Freshly Ground Black Pepper to taste

For the Garlic Butter

  • 1/2 Cup Unsalted Butter at room temperature
  • 3 Cloves Garlic minced (especially wonderful if you use roasted garlic)
  • 1/2 teaspoon Kosher Salt
  • 1/4 teaspoon Freshly Ground Black Pepper

Instructions

  • To make the garlic steak butter, combine butter, garlic, salt, and pepper. Transfer the mixture to parchment paper; shape into a log. Roll in parchment to 1 ½ inches in diameter, twisting the ends to close. Refrigerate until ready to use, up to 1 week.
    1/2 Cup Unsalted Butter, 3 Cloves Garlic, 1/4 teaspoon Freshly Ground Black Pepper, 1/2 teaspoon Kosher Salt
  • Preheat oven to broil. Place an oven-proof skillet, we prefer to use our Lodge Cast Iron Skillet, in the oven.
  • Using paper towels, pat both sides of the steak dry. This is essential to get a nice caramelization on the steak. Drizzle with olive oil; season with salt and pepper evenly to taste.
    3 Rib-Eye Steaks, 4 Tablespoons Olive Oil, Kosher Salt and Freshly Ground Black Pepper
  • Remove the skillet from the oven and heat over medium-high heat on the stovetop.
  • Once the pan is hot, place the steak in the middle of the skillet and cook until a dark crust has formed, about 1 minute. Using tongs, flip, and cook for an additional 60 seconds.
  • Remove the skillet from the stove.
  • Place your skillet into the oven and cook until desired doneness is reached, about 4-5 minutes for medium-rare, flipping once. Let rest for 3-5 minutes, tented, not wrapped with foil.
  • Serve immediately with a slice of garlic butter.

Steaks can be tricky to buy. The ribeye is one of the most flavorful cuts of steak, however a filet, New York or T-bone would work as well.
To reheat, place leftover steaks on a wire rack set in a rimmed baking sheet and warm them on the middle rack of a 250-degree oven for about 30 minutes.

In college there were only a couple of restaurants and quickly Texas Roadhouse became my favorite. A Dallas filet, loaded baked potato, no sour cream and house salad with ranch. It was my go-to and I’ve never forgotten that Dallas filet!

Over the years, I have become such a home body though. Is that normal? Once you become “middle-aged”, hitting the town starts to lose it’s appeal? Is that thing? Well, it’s a thing for me, and going out for Valentine’s Day along with every other human just sounds blah! So I’m cooking a fancy (but so easy) dinner at home again this year. Filet mignon it is! All the fancy restaurants can eat their heart out!

What You Need to Cook Filet Mignon at Home

You only need a few simple ingredients to add flavor to the filets, a good cast iron skillet and a pair of tongs. It really is that easy! Oh, a meat thermometer is very helpful too if you have one!

Ingredients You’ll Need

  • Filet Mignon: A tender, buttery cut of beef that cooks quickly and stays incredibly juicy.
    • PRO TIP: Look for evenly sized steaks so they cook at the same rate.
  • Kosher Salt: Enhances the natural flavor of the steak and helps create a beautiful crust.
  • Ground Black Pepper: Adds just enough warmth and bite to balance the richness of the filet without overpowering it.
  • Oil: Used to get a hot, even sear. Choose a neutral oil with a higher smoke point so the steak browns beautifully without burning.
  • Unsalted Butter: Melted into the pan at the end for basting, adding richness and that classic steakhouse flavor.
  • Garlic: Cloves infuse the butter with savory flavor as the steak finishes cooking.
  • Fresh Rosemary: Adds a subtle, woodsy flavor that makes the steak extra delicious.
  • Fresh Thyme: Brings a soft, earthy note that pairs perfectly with beef and butter for a restaurant-quality finish.

How to Make Juicy Filet Mignon

  1. Prep: Pull the steaks from the fridge to come to room temperature. Season each steak heavily with salt and pepper. Preheat the oven to 475°F.
  2. Sear: Heat a cast iron skillet over high heat for 3-5 minutes, then carefully drizzle with oil. Using tongs, gently place the steaks salted side down and sear for 2-3 minutes.
  3. Flip: Season the other side then flip the steak using the tongs and sear for another 2-3 minutes. Remove the skillet from the heat.
  4. Finish in the Oven: Add the butter, garlic and herbs to the skillet and place the skillet into the oven. Cook for 4-7 minutes.
    • NOTE: Use a meat thermometer in the thickest portion of the filet and pull from the oven when the internal temperature is 5 degrees below your desired doneness (see section below).
  5. Rest: Remove from the oven and tent with foil for 2-5 minutes. This step is crucial for a juicy filet mignon. Don’t skip it!

How to Tell when Filet Mignon is Done

Everyone has their preferred level of doneness when it comes to steaks, so it’s completely up to you. Here are the internal temperatures for filet mignon:

  • Rare: 125°F (red with red juices)
  • Medium Rare: 130°F (deep pink with reddish juices)
  • Medium: 140°F (light pink with clearer juices)
  • Medium well: 150°F (gentle pink center with clear juices)
  • Well done: 160°F (fully cooked through, no longer pink at all, all grey meat)

Common Mistakes to Avoid

One of the biggest mistakes when cooking filet mignon is starting with a cold steak. It needs to be pulled out of the fridge early and brought to room temperature. Cooking a cold steak leads to uneven cooking.

Filet mignon needs to be both pan seared first and then finished in the oven. A pan seared filet mignon has a delicious crust on the outside, but that isn’t enough to cook it all the way through. Finishing in the oven brings the steaks to a safe internal temperature. This is the best way to cook filet mignon.

Once a steak is done, it’s so tempting to jump in and devour it, but the resting period is crucial. The juices redistribute while it rests making it even more tender and melt-in-your-mouth.

What to Serve with Filet Mignon

For me, the perfect meal is filet mignon with some vegetables on the side, a starch and a carb…bread, yes, always bread! Here are a few of my favorites:

Vegetables: Roasted Broccoli, Grilled Asparagus, or Strawberry Spinach Salad

Starch: Mashed Potatoes, Roasted Herb Potatoes, or Baked Potatoes

Bread: Herbed Focaccia, Crusty Artisan Loaf, or Potato Rolls

Storing and Reheating

Filet mignon is best eaten fresh, but if you have leftovers, they should be stored in an airtight container in the refrigerator. They will keep for 4-5 days. I actually prefer to slice leftovers so they are easier to reheat.

When leftovers are cut into slices, then I just give each slice a quicky little sear in a skillet on the stove before serving. If the steak is still whole, I prefer to reheat it in the oven at 250 degrees F for 20-25 minutes. When I’m feeling really ambitious, I’ll reverse sear each side for about a minute to get that yummy crust back.

  • Kosher Salt

Instructions

  • Remove fillet steaks from fridge 30-60 minutes before cooking.
    2 Filet Mignons
  • Season heavily with kosher salt and pepper and let sit.
    Kosher Salt, Ground Black Pepper
  • Heat the oven to 475°F.
  • Using a cast iron pan, place over high heat for 3-5 minutes. Once hot, carefully drizzle in oil. Gently, using tongs, add the meat, salted side down.
    1 Tablespoon Oil
  • Sear the Filet Mignon for 2-3 minutes, seasoning the other side heavily with kosher salt and pepper. Cook another 2-3 minutes until browned with a nice crust. Quickly remove skillet from heat.
  • Add the butter, garlic, and herbs.
    2 Tablespoons Unsalted Butter, 2-3 Cloves Garlic, 2 Sprigs Fresh Rosemary, 2 Sprigs Fresh Thyme
  • Place directly in the oven and cook for 4-7 minutes depending on thickness. Use a meat thermometer in the thickest portion and go under the desired temp by 5 degrees (see note).
  • Remove from oven and tent with foil for 2-5 minutes. Baste with butter and serve.

I’ll be honest, mom’s chocolate zucchini cake is one of the most moist and wonderful cakes in my humble opinion. And if you’ve tried our best chocolate cake recipe, then you know I do not mess around with dry cake.

Which is why you’re going to love this chocolate mayo cake! I worked out the kinks on this mayo cake and those Southerners that swore I just HAD TO TRY IT were right. It is the most wonderful chocolate cake!

Ingredients for Chocolate Mayonnaise Cake

Mayonnaise replaces the butter and oil in this recipe, adding moisture and tenderness without any mayo flavor at all. It’s a simple, pantry-friendly cake that comes together easily and bakes up soft, chocolatey, and totally irresistible.

Cake

  • All-Purpose Flour: Gives the cake structure while keeping the crumb soft and tender.
  • Cocoa Powder: Unsweetened cocoa powder adds rich chocolate flavor. We like Hershey’s or Dutch-process cocoa, but any unsweetened cocoa powder will work just fine.
  • Sugar: Sugar does more than sweeten. It helps create a moist texture, encourages browning, and gives the cake its soft, tender crumb.
  • Baking Soda: This is the leavening that helps the cake rise. Make sure it’s fresh so your cake bakes up light and fluffy.
  • Salt: A little salt is essential in baking. It balances the sweetness and enhances the chocolate flavor.
  • Vanilla Extract: Adds depth and warmth to both the cake and frosting. Don’t skip it! It makes all the difference!
  • Mayonnaise: The secret ingredient! Mayonnaise replaces the oil and eggs, adding moisture and richness without any mayo flavor. Be sure to use full-fat mayonnaise, no light versions here.
  • Water: Hot water helps “bloom” the cocoa powder, intensifying the chocolate flavor and making the cake extra rich. Make sure it’s hot, not warm.

  • Cream Cheese: Gives the frosting a subtle tang and creamy texture. Any brand works, just be sure it’s fully softened to avoid lumps.
  • Butter: Adds richness and structure to the frosting. Use unsalted butter so you can control the salt level, and make sure it’s at room temperature.
  • Cocoa Powder: The same cocoa powder used in the cake works perfectly here, delivering deep chocolate flavor throughout the frosting.
  • Powdered Sugar: Sweetens and thickens the frosting for that smooth, spreadable consistency. We typically use C&H confectioners’ sugar.
  • Vanilla: Adds a little extra flavor and rounds out the chocolate beautifully.
  • Milk or Chocolate Milk: Used to thin the frosting to the perfect consistency. For an extra indulgent touch, chocolate milk takes this frosting over the top.

How to Make Old Fashioned Chocolate Cake

How many times can I say that this cake is easy? Mix everything together, pour in a baking pan, and bake. The frosting is just as simple. Dangerous, I know!

For the Cake

  1. Prep: Preheat the oven to 350 degrees F and grease your baking dish.
  2. Whisk: Add all the ingredients together and whisk in a large bowl.
    • PRO TIP: Stop stirring as soon as the cake batter comes together. An over-mixed cake is a dry cake.
  3. Pour: Pour the batter into your prepared pan and smooth it out so it’s even.
  4. Bake: Place the cake in the preheated oven and bake.

For the Frosting

  1. Combine: Mix all of the ingredients together.
    • PRO TIP: It is crucial that your butter and cream cheese are both room temperature. If you try to add either of them cold, you’ll have lumpy frosting.
  2. Frost: Wait for the cake to cool completely then spread all over the top.

Tips for Perfect Cake

  • Use full fat mayonnaise and avoid the avocado one. A fat free or low fat mayo will not give sufficient moisture and tender crumb to the cake.
  • Do NOT Measure Flour Wrong! Read this post about how to measure flour and I will literally prove to you that there really is a wrong way.
  • Do NOT over-mix!  Don’t worry about a smooth batter, stop as soon as everything is combined.
  • Do not over-bake your cake.  Check by inserting a toothpick into the center of the cake.  If the toothpick comes out clean, without crumbs or goo, your cake is done.

Thumbprint Cookies with Jam

Ingredients

  • 1 Cup Butter
  • Cup Sugar
  • Cup Brown Sugar
  • 1 Egg Yolk
  • ½ teaspoon Vanilla
  • ¼ teaspoon Almond Extract
  • 2 ¾ Cup Flour *see note
  • 2 teaspoons Cornstarch
  • ½ teaspoon Salt
  • ½ Cup Seedless Jam
  • 4 oz White Baking Bark or white chocolate chips

Instructions

Prepare the White Chocolate

  • Chop 4 ounces of the white baking bar or chips, set aside.
    4 oz White Baking Bark

Make the Cookies

  • In a standing mixer or bowl with a handheld mixer, beat the butter on medium speed until softened.
    1 Cup Butter
  • Add the sugars and beat until combined.
    ⅓ Cup Sugar, ⅓ Cup Brown Sugar
  • Beat in egg yolk and extracts.
    1 Egg Yolk, ½ teaspoon Vanilla, ¼ teaspoon Almond Extract
  • Beat in the flour, cornstarch and salt.
    2 ¾ Cup Flour, ½ teaspoon Salt, 2 teaspoons Cornstarch
  • Scoop cookie dough into 1 Tablespoon-sized balls and roll very well (so that the dough is round and no cracks/seams show).
  • Place on a wax-paper covered plate or small cookie sheet.  Use your thumb or the rounded back of a teaspoon to gently press an indent in the center of the cookie dough. You can do two thumbprints side by side to make a heart if you want. Repeat until all of the dough has been used.
  • Transfer cookie dough to freezer and chill for 30 minutes.
  • Meanwhile, place your jam in a small microwave-safe bowl. Heat for 5-10 seconds or until jam is no longer firm and is easy to stir.
    ½ Cup Seedless Jam
  • Spoon jam into each thumbprint, filling each indent to the very brim.
  • Place cookies at least 2" apart on a parchment paper-lined cookie sheet and bake at 375℉ for 9-11 minutes or until edges are just beginning to turn golden brown.
  • Allow cookies to cool completely. Then transfer to a wire rack to cool.

Prepare the Topping

  • Melt 4 oz white chocolate over low heat, stirring constantly.
  • Drizzle each cookie with some of the melted mixture.

Notes

In certain areas, you might need to reduce the flour by 2 Tablespoons so they dough doesn’t end up too dry.
Store in an airtight container or ziplock bag for up to 3 days at room temperature.
