Before You Begin…

Radicchio is quite bitter so we want to soak it in cold water first to remove the bitterness. Then toss it with a little red wine vinegar and salt for pickle it a little.

Ingredients for Coconut Curry Chicken Burgers

  • Naan: You can buy naan at the store or use flatbread or pita bread. It is a fun change from a typical hamburger bun and tastes delicious!
  • Ground Chicken: Chicken tastes great with the curry. You can also use ground turkey if you want.
  • Coconut Curry: If you make curry at home, you will need: curry powder, garam masala, yellow onion, garlic, sweetened coconut milk, tomato paste, salt, pepper, sugar, water, and cornstarch.
  • Salt and Pepper: adds flavor to the patties
  • Radicchio: or red cabbage works great too
  • Red Wine Vinegar: helps pickle the radicchio for extra flavor
  • Cilantro: adds a delicious pop of freshness and flavor
  • Lime Wedges: adds just a touch of acid

Are Chicken Burgers Healthy?

Ground chicken is a healthier alternative to ground beef and a great option for making a burger. Ground chicken is low in fat, high in protein, and inexpensive which is always a win these days! I paid $4.49/gallon at the gas station yesterday and I wanted to cry!

How to Make Chicken Curry Burgers

Since this isn’t your typical burger recipe, let me walk you through how to make them…

  • Divide the ground chicken into 4 equal parts and gently squeeze them into balls. Sprinkle them all with salt and pepper and store them in the fridge.
  • Prep the radicchio by soaking it in cold water for 5-15 minutes and then drain it well. Toss it in a bowl with vinegar and salt and store in the fridge.
  • Make the curry or warm up your store-bought curry and keep it warm on the stove.
  • Heat up your cast iron skillet over medium high heat and add a drizzle of vegetable oil. Put one portion of the ground chicken down and season the other side.
  • Place one piece of naan (or flatbread) on top of the ball and press it down all over so the meat flattens evenly all over the naan. Allow it to cook until golden and cooked through.
    • The meat patty almost becomes one with the flatbread and it almost becomes like a taco shell for the rest of the toppings. It’s so fun and unique!
  • Remove from the skillet and spread curry sauce all over it. Sprinkle with the radicchio, some cilantro and a squeeze of lime juice. Repeat with the remaining patties.

What to Serve With Curry Burgers

Whenever I think of burgers, my mind immediately goes to hot french fries! That is a great side dish for this meal, but since it’s not your typical burger, you can totally have fun with the side dishes. Here are a few ideas:

Can Chicken Burgers Be Made Ahead?

Parts of this recipe can definitely be made ahead, but I wouldn’t assemble the burger ahead of time. They are best made hot and fresh! You can prep the ground chicken ahead of time into balls. Just store them in an airtight container in the fridge until you’re ready to make them.

You can also prep the curry ahead of time and just warm it up when you are starting to make the burgers. Curry actually gets better if it’s allowed to sit for a while.

Storage Tips

Once these burgers have been assembled, they don’t store very well. The flatbread or naan will get soggy and they just don’t reheat well. You can store the burgers without the curry sauce and toppings for up to a day or two. Reheat them on the stove top in a skillet and top as written in the instructions.

These chicken burgers are a healthier choice for BBQ and they have a special ingredient that makes them delicious! Apples add a touch of sweet to these savory chicken burgers with a simple maple mustard sauce.

Remember how I was super picky as a kid? I hated ground beef. Like, hated it. This meant that hamburgers were totally out of the question for me.

If we had a BBQ I was a die-hard hot dog connoisseur.

Ground Beef and Rice Casserole? Please leave me a corner of just rice.

Fast forward more years than I care to count and I’m in love with all things, but I still hold on tight to the old favorites as a kid, which includes chicken burgers!!!

What Ingredients Do I Need to Make Apple Chicken Burgers?

The mix of ingredients in these chicken burgers is going to blow you away! A little sweet, a little salty, and everything perfect! Here is what you will need:

Burgers

  • Bacon
  • Red Onion
  • Garlic
  • Pepper
  • Salt
  • Apple Juice
  • Apple
  • Parsley (fresh)
  • Sage
  • Ground Chicken
  • Panko Bread Crumbs
  • Brioche Buns
  • Lettuce
  • Monterrey Cheese

It make look like a long list but trust me on this one! These are perfection!

The perfect maple mustard sauce is what takes these burgers over the top! You only need 3 simple ingredients:

Sauce

  • Dijon Mustard
  • Maple Syrup
  • Mayonnaise

To make this sauce, just mix the ingredients together in a small bowl and place it in the refrigerator to use later.

How Do I Make Apple Chicken Burgers?

We have all sorts of burger recipes on the blog, like our Southern Pimento Cheeseburger and our Teriyaki Pina Colada Burger, but this is our first chicken burger! Let’s jump into how to make them!

Burger Additions

  • We are going to start by cooking the bacon. Take the 5 slices of bacon and chop them into the small pieces (about 1 inch pieces). Heat a large skillet over medium heat and cook the bacon pieces. When they are done, place the bacon on a plate lined with a paper towel. Save 1 teaspoon of the bacon grease and discard the rest.

  • Using the same skillet, add the 1 teaspoon of reserved bacon grease and place it on the stove over medium heat. Add the onion, garlic, salt and pepper to the skillet and cook everything until the onions are tender. It will take about 2 minutes.
  • Next you are going to deglaze the pan by slowly pouring in the apple juice and scraping the bottom of the pan with spoon to clean the bits off the bottom of the pan. Simmer the apple juice for a few minutes until the liquid is gone.
  • Add the cooked bacon pieces, diced apple and herbs to the onions and cook until the apple starts to soften. Then remove everything to a bowl to cool.

Patties

  • Now it is time to form the burger patties. Combine the bread crumbs, chicken and apple mixture in a large bowl.

  • Handling the meat gently, shape the mixture into 6 patties (or 4 larger patties). Place them on a large plate or baking sheet and sprinkle the tops with salt and pepper. Set the patties in the refrigerator to rest for up to 30 minutes.

Grilling

  • Now it is time to fire up the grill! Over medium high heat, grill the patties. Put the seasoned side down first and grill for 6-7 minutes. Salt and pepper the other side and flip the patties to cook on the other side for another 6-8 minutes. You want the patties to be cooked to an internal temperature of 165 degrees. When they are cooked through, top with cheese and let it melt.

Assemble

  • We are all about the brioche buns for our burgers. They hold up well to the sauce and all the goodness of this burger, but they are still soft and perfect! We like to grill the buns quickly. Grab the maple mustard sauce out the fridge and and spread it on the bottom bun. The add the meat patty and whatever toppings you enjoy.

What Is The Best Way To Cook Bacon?

For this recipe since we are just doing small bacon pieces, cooking them in a skillet works perfectly. Plus, we also want that delicious bacon flavor left in the pan for cooking the onions and apples.

How Do I Know When Bacon Is Done?

I always go with the way bacon looks when cooking it. You want it to become slightly brown, opaque and crispy.

What Kind Of Onion Can You Substitute For Red Onion?

The closest in texture and flavor to a red onion is a yellow onion. Red onion is slightly sweeter and just looks prettier in my opinion, but to be honest, you won’t notice a difference.

Is Ground Chicken Healthier Than Ground Beef?

Ground chicken is leaner than ground beef, but because it is leaner, you need to add fat and moisture to it. In this case we add bacon to it to make it more moist and tender. Ground chicken is a great way to mix up your proteins and flavors, and on it’s own it is healthier.

How Long Will Ground Chicken Keep?

Raw ground chicken will last in the refrigerator for 1-2 days. After ground chicken is cooked, it will keep in the fridge in an airtight container for 3-4 days. If you want it to last longer, it can be stored in the freezer for 2-3 months.

Huli huli chicken on the grill is about to become one of your go-to summer grilling recipes! The marinade is so addicting, we have made it three times this week!

What Is Huli Huli Chicken?

When I was growing up, we had a family that moved in next door to us who was from Hawaii. I think they had actually been living in California before moving to Washington, but that doesn’t matter. What matters is that even when it was pouring down rain the dad was ALWAYS in shorts or a sarong. To a young girl, I thought it was the craziest thing that he wasn’t freezing cold!

But none of that even mattered once summer rolled around. They’d roast a pig right there in the backyard and grill up huli huli chicken!

Huli Huli chicken originated in the mid-1950s in Hawaii when Ernest Mogado and Mike Asagi began grilling chicken in a sauce similar to teriyaki sauce. They used a makeshift spit and yelled “huli” which means “turn” every time they flipped the chicken and then basted it in the huli huli sauce.

My neighbor’s Hawaiian huli huli chicken smelled so good and tasted even better! So get comfy in some shorts or a sarong and let’s get grilling! It will transport you straight to the beach in Hawaii! Oh and prep a pineapple for some brown sugar grilled pineapple too!

What’s in Huli Huli Chicken?

The star of this recipe is the huli huli chicken marinade. It is packed full of flavor and so easy to make. Here are the simple ingredients you need:

  • Ketchup
  • Brown sugar
  • Soy sauce
  • Fresh ginger
  • Garlic (crushed)
  • Pineapple juice
  • Rice vinegar
  • Ground mustard

And, of course, you’ll need boneless skinless chicken breasts to round off this recipe!

Can I Use Chicken Thighs Instead?

The answer is yes! We love thighs and the flavor they have, but chicken breasts are equally as good! And they are a little healthier too. Make a few of each and see which on you prefer!

How to Make Huli Huli Chicken

  1. Add all of the huli huli sauce ingredients into a saucepan over medium heat and cook it for 3 minutes.
  2. Allow it to cool, then add 3/4 of it into a Ziploc bag to marinate the chicken for about 30 minutes. Save the other 1/4 of the sauce for basting the grilled chicken.
  3. Heat your grilled to medium-high heat.
  4. After the chicken has marinated, add the chicken to the grill. Reduce the heat to medium and cook for 6 minutes.
  5. Huli (flip) that chicken and let it cook for another 6-7 minutes.
  6. Remove the chicken from the grill and let it rest for a couple of minutes before serving.

What to Serve With Huli Huli Chicken

I’ve already mentioned the grilled pineapple, but we also love this huli huli chicken with our coconut rice! So good! A few other option for sides are macaroni and cheese, grilled lemon asparagus, or lemon mandarin orange jello salad.

Can Huli Huli Chicken Be Baked?

Absolutely! Here are the steps to making baked huli huli chicken:

  1. Preheat your oven to 350 degrees F.
  2. Sear the chicken on the stove top over medium high heat with a little bit of olive oil. Sear each piece of chicken for 2-3 minutes on each side.
  3. Line a 9×13-inch baking dish with foil and place the seared chicken in the dish.
  4. Cover the dish with foil and bake for 30 minutes.
  5. Brush the chicken with your reserved huli huli sauce and then bake uncovered for another 15 minutes.

How Long Does Huli Huli Chicken Last?

Huli huli chicken will keep in the refrigerator for up to 5 days. Store it in an airtight container.

You can also freeze it. Place the raw chicken and huli huli sauce in a Ziploc bag and store it in the freezer. It will keep for up to 2 months. When you’re ready to cook it, let it thaw overnight in the refrigerator and then grill it or bake it as stated in this post.

How to Reheat Huli Huli Chicken

Huli huli chicken can be reheated in the microwave or in the oven. If you use the microwave, be sure to not overheat it. To reheat in the oven, preheat the oven to 350 degree Fahrenheit and warm up the chicken for 25-30 minutes. We always like to have extra sauce on hand when we reheat!

Is Huli Huli Chicken Gluten-Free?

Soy sauce is not gluten free, so if you want this huli huli chicken to be gluten free, be sure to use gluten free soy sauce. All the other ingredients, you have a GF green light!

Tips for Making Hawaiian Huli Huli Chicken

Note that you can marinate the chicken in the huli huli sauce for 30 minutes to 2 hours. Don’t marinate for more than 2 hours, otherwise you’ll wind up with tough, chewy grilled chicken.

REMEMBER! Letting chicken rest after grilling is KEY to moist chicken.

You can add more sauce to the chicken before serving, or allow people to add the sauce on their own. For me, the more sauce the better!! And we love to top it with some chopped green onions.

You are going to want to make this huli huli chicken over and over again! It is full of flavor and so quick and easy! Huli huli!!

Do you love Japanese Steakhouse Ginger Dressing? Us too, but we only just tried it as an Asian Ginger Marinade for Grilled Chicken and it’s the best chicken marinade yet!!

When Carrian and I were first married we loved heading to a favorite Japanese Steakhouse with our friends and there was this really yummy Ginger Dressing served over a very simple, crisp ice burg lettuce salad and all of us loved starting our meal with it. Sometimes simple really is best. The other day we were chatting about how long ago that all seems and we decided to recreate the dressing. As we tasted it I couldn’t help but think how great it would be for a main dish and this Asian Ginger Marinade for Grilled Chicken recipe was born. 

Marinating always sounds like one extra step, but it’s Carrian’s favorite thing to do because she can start dinner whenever she has an extra five minutes and then tomorrow’s meal is all prepped and ready to go the next day. No slaving in the kitchen or last minute realizing dinner is in 30 minutes and you have nothing prepared.

Carrian and I love marinade because it also flavors meat, especially chicken so well and all you have to do it let it sit in the fridge. When we were finishing up college it was a great way for us to concentrate on school and our jobs, but still come home and have a healthy meal together. Now that we have children to care for it also allows us to be less stressed before meal time as half of the work is already done.

The Asian Ginger Marinade for Chicken has a lot of flavor, but it’s still a simple enough flavor combination that kids will eat it and enjoy it too. And you know how picky our two year old is, so that says a lot.

We just keep doing the same thing, make dinner, put it in front of him, don’t make it a fuss but help him at least try a bite and if that’s all he takes we consider it a win still. No separate meals or you have to eat the whole thing before you leave. All of that eventually seems to backfire, so instead we make meal time about the people until their little palates change and it becomes about the food too.

Of course we still get frustrated too. Toddlers are the best and the worst. We just tag team it. If I get annoyed, Carrian takes over and vice versa. It’s all about little steps and being on the same side as parents.

Japanese Ginger Dressing is a simple combination of ingredients, but each one has an important role, so this is one of the few recipes that we don’t recommend making substitutions for or skipping ingredients. Let’s break our Asian Ginger Marinade for Grilled Chicken down.

How to Make a Japanese Steakhouse Ginger Dressing

Japanese ginger dressing is made by whisking together a vinegar, oil and fresh garlic and ginger along with a few other ingredients. Let’s break down the most important ones first.

  • Ginger

Obviously you can’t make a ginger dressing or marinade without ginger, but you’re going to want to use fresh ginger as it packs the best flavor, especially for a dressing that you want to taste clean and not dull.

  • Fresh Ginger vs Ground Ginger 

Is ground ginger the same as fresh ginger? Yes and no. Ground ginger does come from actual ginger, but you can’t think of them as exactly the same as fresh packs a bigger punch and flavor with it.

  • Substituting Ground Ginger for Fresh Ginger

If you absolutely must substitute ground ginger in place of fresh ginger you can use 1/8-1/4 teaspoon of ground ginger in place of 1 tablespoon fresh ginger and vice versa.

  • How Can I Substitute Ground Ginger?

There isn’t a substitute for ground ginger, especially in a ginger dressing.

  • Peanut Oil

Peanut Oil is much like ginger in that it has a distinct flavor compared to other oils. While you can substitute for other oils like canola or olive oil, the flavor won’t be exactly the same so we don’t recommend it.

Side note- peanut oil is the best oil for frying foods. It maintains a higher heat without burning. 🙂

  • Shredded Carrot

Shredded carrot may seem an unlikely ingredient but it adds a little sweetness to cut through the vinegar and adds a little more color to the marinade.

  • Rice Vinegar

Rice vinegar is another unique flavor that should be kept in the recipe unless you’re absolutely desperate. It has a more mild flavor so a balsamic or red wine vinegar won’t be a great substitute. However, if you do need a rice vinegar substitute try cider vinegar.

  • Garlic

Garlic and ginger go so well together it would be a shame to not add garlic to this dish. If you must substitute out the fresh garlic, dried or ground garlic powder would be fine.

  • How Much Garlic Powder Equals One Clove of Garlic

Let’s say you can’t get to the store for a head of garlic, how much garlic powder equals one clove of garlic? 1/8 teaspoon is about 1 clove of garlic according to google, but I usually go for 1/2 teaspoon.

When to Marinate Chicken

There’s always the question of when should you marinate your chicken. We believe the best answer is 12-24 hours before cooking it as the flavors really develop and have time to sink into the meat.

However, that’s not always possible, so aim for at least two hours before dinner.

Will Marinade Preserve Chicken?

Marinade doesn’t really preserve chicken, but it can certainly toughen it. Any marinade with acid like lemon juice or lime juice can toughen meat. We like to use zest and some juice as the zest packs extra flavor without the acid to help with this. This Asian Ginger Marinade for Grilled Chicken won’t have that issue.

How Long Will Marinated Chicken Last in the Fridge?

Marinated chicken can sit in the fridge for up to 2 days according to the USDA and we totally agree. After that you’re pushing it. If we won’t be using it after 24 hours we throw it in the freezer for up to 2 weeks, or longer if we used a Food Saver.

Can You Cook Marinade from Chicken?

Whatever is on the chicken can be cooked, but don’t reserve the liquid for basting or to turn into a sauce as it has come into contact with raw meat and should be disposed of. This is why we often make a marinade and instruct in the recipe to set some aside in another container.

Can Marinade be Frozen?

Most marinades can easily be frozen in ziploc bags, laid flat in the freezer. If your freezer has metal bars and not a flat shelf, freeze it first on a cookie sheet so it doesn’t slip between the bars and freeze. Been there. Done that. Not worth the hassle.

Can Marinade be Reused?

It seems like a waste to chuck all of that yummy marinade down the sink, so can marinade be reused?

No. 

Please, no.

Marinade has been with raw meat and should be disposed of properly even if it’s raw meat going back in. Cross contamination is just asking to be incredibly sick. Always, always start over.

Can Marinade be Made Ahead of Time?

Marinade can be made days in advance, stored in the refrigerator until ready to be used.

Ingredients

  • 1/4  Cup Onion Minced
  • 1/2 Cup Peanut Oil
  • 1/4 Cup Rice Vinegar
  • 2 Tablespoons Water
  • 2 Tablespoons Ginger Minced Fresh
  • 1 Tablespoon Carrot Finely Shredded
  • 2 Tablespoons Ketchup
  • 4 teaspoons Light Soy Sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Brown Sugar
  • 1 1/2 teaspoon Lemon Juice
  • 1 Clove Garlic Minced
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 4 Chicken Breasts boneless, skinless

Instructions

  • In a large measuring cup, or jar, whisk together all of the dressing ingredients until well combined.
    1/4  Cup Onion, 1/2 Cup Peanut Oil, 1/4 Cup Rice Vinegar, 2 Tablespoons Water, 2 Tablespoons Ginger, 1 Tablespoon Carrot, 2 Tablespoons Ketchup, 4 teaspoons Light Soy Sauce, 1 teaspoon Sugar, 1 teaspoon Brown Sugar, 1 1/2 teaspoon Lemon Juice, 1 Clove Garlic, 1/2 teaspoon Salt, 1/4 teaspoon Pepper
  • Pour 2/3 of the marinade into a zip top bag along with the chicken breasts. Seal and place in the fridge for 2- 24 hours. We prefer a longer marinade time.
    4 Chicken Breasts
  • Place the remaining marinade in a bowl in the fridge.
  • Heat the grill to high heat.
  • Remove the chicken from the fridge to rest on the counter for 5 minutes.
  • Drain the marinade and place the chicken, top side down on the grill. Turn the heat to medium.
  • Cook the chicken for 5-7 minutes, flip over and cook for an additional 5-7 minutes or until cooked through. The last few minutes brush some of the reserved marinade over each chicken breast.
  • Remove from the grill and let rest for 3-5 minutes before slicing.

Notes

May be stored in the refrigerator for 4 days or frozen for 2-6 months.

This easy BBQ chicken is flavored with both a smoky dry rub and a homemade BBQ sauce. Perfect alongside baked beans, grilled veggies, or a simple salad!

Grilled BBQ Chicken Recipe

This BBQ chicken recipe has a secret that’s not really a secret at all, but 90% of people don’t do it. It all starts in a ziploc bag hours, or even a full day before you start grilling, and no, it’s not BBQ sauce being dumped in there. We’ve tried marinating BBQ chicken, but that sauce just doesn’t soak in and flavor the chicken enough.

Our little trick is life changing.

Every year we end up having friends over for a couple of BBQ potlucks and every year we go back and forth on what meat we want to eat. We don’t always want a burger — though you should for sure check out our Homemade Hamburger recipe your life will be changed forever.

What do you make if you’re not serving hamburgers but still need easy for BYOM potlucks?

We are always disappointed in plain BBQ chicken as it doesn’t have a ton of flavor, but adding a BBQ dry rub the chicken and a drizzle of oil to help it stick in a bag for as many hours as you can (up to 24 hours) will flavor the chicken in a whole new way!

Here’s what you’ll need to make this grilled bbq chicken breast recipe:

Can I Use a Store-Bought BBQ Rub?

Yes, you can use any store-bought seasoning for BBQ chicken, but we have perfected our Smoky BBQ rub and store it in a mason jar all year round. So, pretty much you can use anything for the BBQ chicken seasoning, but that would just be silly when our rub recipe is the best. 😉

How to Make BBQ Chicken

I’ve given detailed instructions on how to make BBQ sauce chicken in the recipe card below. Here are the basics:

  1. Start out by adding our Smoky BBQ Rub, a drizzle of oil, and the chicken breasts to a Ziploc bag and let it sit in the fridge.
  2. When you’re ready, let the chicken sit out on the counter for 5 minutes before you stick it on a preheated grill.
  3. Preheat your grill to high heat, then add your chicken and turn it down to medium heat, or even medium low if you have more time. Heating your grill this way will give those beautiful grill marks on the chicken and then turning it down allows it to cook a little slower so it stays juicy!

How Long Do You Grill Chicken?

Not sure how long to bbq chicken? We first grill the bbq chicken breasts for 4-6 minutes, or until the chicken releases from the grill. Then, we flip the chicken and grill for another 3 minutes before flipping one last time and grilling for 3 more minutes. In total, that’s roughly 10-12 minutes. 

Do You HAVE TO Preheat Your Grill?

Oh yes, please preheat your grill. Just because it’s fire doesn’t mean it’s perfectly up to temp just because you turned it on. Think of it like adding chicken to a cold oven.

How to Tell When Grilled Chicken Is Done

Color, according to the USDA doesn’t indicate doneness, so instead you should be more worried about it being 165 degrees Farenheit. Especially with BBQ since the rubs, smoke, etc. all can leave a little pink on meat.

Can You Grill Chicken from Frozen?

You really shouldn’t BBQ chicken from frozen as the higher temperature means that you’ll be cooking the outside faster than the frozen center, which can lead to over cooked, burned or undercooked meat.

Can I Make BBQ Chicken in the Oven?

If you don’t have a BBQ or live in an area where you can’t have a BBQ — hello, NYC! — then you can cook BBQ chicken in your oven instead of a grill.

You have two options: 1) cook in the oven 100%, and 2) cook on a stove top and transfer to the oven.

Cooking in the oven just means placing the chicken in a pan at 350ºF for 30 minutes, basting with bbq sauce for the last 10 minutes.

I really like to cook stove top because I can get the color and that caramelized flavor by starting the chicken in a sauté pan or grill pan. Just like the grill, start the pan at high heat, add the chicken and turn to medium heat. Once color is achieved, flip it over and repeat. Once you have browned both sides, remove to a pan and cook at 350ºF for 15 to 20 minutes.

Can BBQ Chicken Be Frozen?

Freezer meal BBQ chicken is a big yes, just add your rub and freeze in a sealed bag for up to 2 months if you’ve used a Food Saver. Freezing cooked chicken is a little different. Yes you can do it, but absolutely make sure you use that Food Saver I linked to above or the chicken will quickly lose flavor and will become tough.

How Long Will BBQ Chicken Last in the Fridge?

BBQ chicken will last in the fridge for up to 2 days after cooking if it is properly stored.

What Goes With BBQ Chicken?

Is BBQ Chicken Healthy?

Because of the sugar in the BBQ rub and the sugar in the BBQ sauce, it’s not perfectly healthy, but compared to a creamy chicken pasta or something, this simple grilled bbq sauce chicken is healthier so don’t fret too much.

Is BBQ Chicken Keto?

Boy, I had to double check google on this one as I often forget what’s keto, but if you cut down on the sugar and choose a low sugar BBQ you could actually call this BBQ chicken a Keto friendly recipe.

Is BBQ Chicken Gluten Free?

Yup! Unless you pick a BBQ sauce that for some crazy pants reason has gluten.

Is BBQ Chicken Paleo?

Sadly BBQ chicken isn’t paleo as the sugars and such wouldn’t have been found years ago.

Tips for the Best BBQ Chicken

Here’s the trick, do not put BBQ sauce on the chicken until after you’ve flipped it for the first time. The BBQ sauce will just burn too quickly because of the sugars.

After you’ve flipped the chicken, baste it with BBQ sauce and let it cook for 3 minutes, flip and baste and turn it right back over, quickly baste that side and flip it right back for the last three minutes of cooking. We like to add a little more sauce right before serving, but that’s up to you.

In general, when grilling it’s important to always have a cooked and raw plate by the grill so that no cooked food touches raw juices. Also, keep the meat apart on the grill so that no meat touches another raw meat.

Tip: You can baste your grilled chicken with either our Classic BBQ Sauce or our Vinegar-Based BBQ Sauce

If you’re like us, you don’t always remember to whip up a delicious chicken marinade for the grill. Today we are sharing our favorite quick grilled chicken with oregano recipe for when you need dinner in 20 minutes!

Oh man, summer is here and I’m beyond ready for it, are you?! Winter wasn’t that bad in Utah, but it was exhaustingly long. Once spring hit is when our snow came, which is never my favorite. Lately we’ve been firing up the grill or Traeger more than ever before, but that doesn’t mean we always think ahead to make a marinade.

Our daughter came up with this quick grilled chicken with oregano recipe, and I have to admit, it has become our go-to grilled chicken recipe with that yummy spice rub, the grilled lemons and fresh oregano!

My friend has her kids cook dinner once a week and once a week help her cook dinner while the adults take care of all the other days. In an effort to help our kids be more responsible and whine less about what we made for dinner we’ve adopted the same rule.

Our oldest was up first and she wanted to do a Brazilian dinner. This grilled chicken with oregano might not be Brazilian, but it paired really well with her rice, beans and Pao de Quiejo.

Quick Grilled Chicken Recipe

Because our 12 year old was going for this on her own I was a tad nervous so I told her to look through a grilled recipe we had already created, Greek Chicken Souvlaki and adapt that. She big time adapted, but that’s ok, we love it!

She chose to use fresh herbs and lemons but the rest she just winged it. I helped with measurements, but otherwise it’s all her.

The only fresh herbs we had growing was the oregano so she cut it off and we taught her how to hold the twig at the top with one hand, use the other hand to pinch the stem gently and slide her fingers towards the bottom, gently stripping the leaves off of the plant.

Because it was a grill, when she smelled the smoked paprika she knew she wanted to use that so we helped her also grab salt and pepper for seasoning, and garlic because garlic makes us happy. The only other ingredient was oil to bring the spice rub all together and help the chicken release from the grill.

The lemons she chose to grill just like our Greek Chicken Souvlaki and I’m glad she did as it was the perfect touch to brighten up an otherwise smoky meat.

Tips for Teaching Kids to Cook

  1.  Teach your kids to smell their ingredients. -We taught our daughter that she should smell the spices and herbs she was thinking to use and if it smelled good together it would probably taste good together.
  2. Let them use fresh herbs– Fresh herbs are a great way to add flavor without a lot of work, plus you get to teach them how to strip the leaves and chop something fresh.
  3. Show them how to properly handle raw meat – Oh please teach your kids about raw meat and contamination. One cutting board and one utensil for meat and another for veggies or herbs.
  4. Teach them to use all their senses– Cooking should use your eyes to watch the food, listening to hear if something is sizzling or bursting, smell because as something cooks the smells grow and touch; a raw piece of meat gives a lot when you touch it while cooked meat is firm.
  5. Teach them about timers to help you not burn food– And of course teach them to set a timer just to be safe. 5-7 minutes per side on chicken depending on how big and thick the breast is.

How to Know When Grilled Chicken is Done

Grilled chicken might seem intimidating to some because we all want to avoid pink, undercooked chicken that can make you sick, and dry, overcooked chicken that makes you choke as your try to chew your way through it.

If you follow our guide for how to cook chicken in a pan, it’s the exact same thing for the grill. The high heat, a well heated grill is essential to getting those beautiful grill marks, but turning the heat down allows it to cook at the right temperature.

If you’re trying to remove chicken from the grill to flip it or take it off of the grill and the meat is sticking to the grill grates, it’s not ready, put it back! The meat will release when it’s cooked. It’s a fool proof way to know when chicken is cooked.

The Secret to the BEST Grilled Chicken

Do you want to know what the real secret is though? It’s not in the seasoning, the marinade or gas versus charcoal grilling, it’s what you do with the chicken after it is cooked.

Once your chicken breast is done on the grill, do not move it to an upper rack, instead remove it completely from the grill to a plate. Tent with foil, which meant to lay foil across the meat without wrapping it in foil and allow it to rest for 3 minutes before slicing into it. The juices have gathered and if you cut into the chicken they will escape and you’ll be left with dry meat.

I know you’re hungry and ready to dig in, but just give it a minute to redistribute the juices.

Why is Grilled Chicken Breast Healthy?

Chicken breasts have a good amount of protein with lower fat, but it’s especially healthy because you tend to cook it without many extras. Grilled chicken should be stored properly in a sealed container or resealable bag in the fridge for now more than 3 days after it’s been cooked. You can freeze cooked chicken but it zaps flavor like nobody’s business so should you choose to freeze the chicken please be sure to use a Food Saver. Quick Grilled Chicken with Oregano Recipe

If you're like us, you don't always remember to whip up a delicious chicken marinade for the grill. Today we are sharing our favorite quick grilled chicken with oregano recipe for when you need dinner in 20 minutes!

Ingredients

  • 1 Tablespoon Smoked Paprika
  • 2 teaspoons Oregano fresh, chopped
  • 1 Tablespoon Garlic minced fine
  • 1/2 teaspoon Salt
  • Black Pepper
  • 2 Tablespoons Olive Oil Extra Virgin
  • 2 Chicken Breasts boneless, skinless
  • 1 Lemon halved

Instructions

  • Heat the grill to high heat.
  • Fold up a few paper towels and drizzle with olive oil. Rub the grates of the grill with the olive oil once the grill is hot to help with meat sticking.
  • In a bowl, mix the spices, herbs and olive oil. Place the chicken in the bowl and rub the seasonings all over.
    1 Tablespoon Smoked Paprika, 2 teaspoons Oregano, 1 Tablespoon Garlic, 1/2 teaspoon Salt, Black Pepper, 2 Tablespoons Olive Oil, 2 Chicken Breasts
  • Let the chicken rest while the grill heats up so you don't place cold chicken on the grill. If you do the outside will overcook while the cold middle stays raw.
  • Place the chicken on the grill.
  • Cook the chicken top side down first for 5-7 minutes, gently lift and flip the chicken, cooking for an additional 5-7 minutes.
  • Meanwhile, drizzle olive oil on one half of the flesh of the lemon, then stick both pieces back together to spread the olive oil all over it.
    1 Lemon
  • Place the lemons flesh side down on the grill until grill marks appear and remove from the heat.
  • Remove the chicken to rest, tented with foil for 3 minutes.
  • Serve with fresh lemon juice squeezed from the lemons.

Notes

Store left-overs in the refrigerator for up to 4 days.

With warm weather finally here, we’re planning to spend as much time outside as possible. I’m all about those summer vibes – kids running in sprinklers, fresh cut grass, long days, and low-key dinners that are tossed on the grill and served outside. Chicken skewers are the definition of a low-key summer meal.

Tips for Skewers

The best shortcut for assembling quick skewers is to buy pre-cut (uncooked) chicken tenders. No chopping necessary – just slide the chicken tenders onto skewers, season with some salt and pepper, cover, and refrigerate until you’re ready to cook.

Honey Garlic Dipping Sauce

But what makes these particular chicken skewers so special is the easy Honey Garlic Dipping Sauce they’re served with. Sweet and savory goodness. It only takes a few ingredients and you can pop the sauce in the fridge to use on other dishes the next week if you don’t need all of it.

How Long Does Dipping Sauce Keep in the Fridge

The sauce keeps in the fridge for up to a week, so make a batch and just pull it out when you’re ready to cook. This recipe makes extra sauce because some of it is used as a glaze on the chicken. Extra sauce also makes for happy dipping and drizzling. Because no one passes up extra honey garlic dipping sauce. No one.

Ingredients

For the skewers:

  • 10 to 12 Wooden or Metal Skewers one skewer per chicken tender
  • 1 1/2 lbs Pre-Cut uncooked chicken tenders
  • Salt and Black Pepper
  • 2 Tablespoons Cooking Oil we use grapeseed oil for high heat cooking

For the sauce:

  • 4 Cloves Garlic chopped
  • 1/2 Cup Low-Sodium Chicken Stock
  • 1/4 Cup Soy Sauce
  • 1/4 Cup Honey
  • 1 Tablespoon Brown Sugar light or dark
  • 1 Tablespoon Rice Vinegar
  • 3 Tablespoons Water room temperature
  • 1 Tablespoon Cornstarch

Instructions

  • Prepare skewers: If using wooden skewers, soak in water for 15 minutes to prevent burning. Thread one chicken tender onto each skewer. Season on all sides with salt and black pepper. Cover and refrigerate until ready to cook.
    10 to 12 Wooden or Metal Skewers, 1 1/2 lbs Pre-Cut, Salt and Black Pepper
  • Make sauce:
    Combine garlic, chicken stock, soy sauce, honey, brown sugar, and rice vinegar in a small saucepan over medium heat. Heat, stirring constantly, until the sauce begins to simmer. Simmer for 5 minutes to let the flavors come together. Whisk together water and cornstarch. Add to sauce while stirring. Simmer until sauce thickens slightly, 1 to 2 minutes more. Set aside (or refrigerate for up to a week).
    4 Cloves Garlic, 1/2 Cup Low-Sodium Chicken Stock, 1/4 Cup Soy Sauce, 1/4 Cup Honey, 1 Tablespoon Brown Sugar, 1 Tablespoon Rice Vinegar, 3 Tablespoons Water, 1 Tablespoon Cornstarch
  • Cook chicken skewers: Prepare outdoor grill or place a grill pan over medium-high heat (if using stovetop).
  • Brush grill grates with cooking oil and place chicken skewers over direct heat.
    2 Tablespoons Cooking Oil
  • Grill chicken on both sides until nearly cooked through (5 to 7 minutes, depending on thickness).
  • While chicken cooks, divide sauce in half, setting one half aside for serving.
  • Brush one half of sauce over both sides of chicken in the last 2 minutes of cooking.
  • Serve chicken skewers with remaining sauce for dipping. (We love these over rice with steamed broccoli on the side!)

Notes

Note: If you can't find pre-cut chicken tenders, buy boneless, skinless chicken breasts and slice into tenders.
Left overs may be stored in the refrigerator for 3-4 days.

In fact, not only is this recipe awesome, but this sticky Asian grilled chicken breasts recipe is a freezer meal too! #WINNING!!!

Cade and I don’t do a lot of freezer meals. For one thing, we are food bloggers and are always making a new recipe so we don’t need food in the freezer. In fact, we use our food saver ALL THE TIME for meals we need to freeze after we made it.

Just a little plug here, if you haven’t bought a Food Saver yet, it’s time. No, really. It’s the best investment ever. We freeze everything and it’s so fresh when we reheat. Even soups and meats which usually aren’t great after cooking and freezing and then finally reheating.

Sticky Asian Grilled Chicken Breasts

We love our Asian Sticky Slow Cooker Ribs recipe so much we needed a chicken version. You make the sauce and let it cool then save half in the fridge for up to 1 month and the other marinates the chicken in the freezer. When you’re ready to cook, just defrost the chicken in the fridge (you should never defrost chicken on the counter) and then let it sit out for five minutes before grilling.

If you’re done with being outside and at the grill just bake the chicken in a dish at 350 degrees for 30 minutes. Or you can cook in a skillet on the stove for 5 minutes per side at medium high heat that is turned to medium low just after adding the chicken. Sticky Asian Grilled Chicken Breasts

Ingredients

Instructions

  • In a dish, whisk together the ginger, pepper, and onion powder.
    2 teaspoons Ground Ginger, 2 teaspoons Ground Pepper, 1 teaspoon Onion Powder
  • Add the garlic and mix again.
    6 Cloves Garlic
  • Add the wet ingredients and brown sugar, whisk to combine.
    1 Tablespoon Sweet Chili Sauce, ⅔ Cup Soy Sauce, ⅔ Cup Balsamic Vinegar, ⅔ Cup Brown Sugar, ⅔ Cup Honey
  • Heat the saucepan to medium heat and bring the sauce to a boil.
  • Once it starts boiling, whisk the cornstarch and water together in a small dish and add 1 tablespoon of the hot liquid.
    1 Tablespoon Cornstarch, 1 Tablespoon Water
  • Stir together and then while whisking in the saucepan, slowly drizzle in the cornstarch mixture.
  • Whisk until it comes back to a boil and then turn to medium low and allow to simmer until it begins to reduce and thicken.
  • This can take up to 10 minutes, or as little as 1-2 minutes.
  • Remove from the heat and set aside to cool completely.
  • Meanwhile, place chicken breasts in a ziploc bag and store in the fridge until the sauce is cool.
    4 Chicken Breasts
  • Once cool, pour half of the sauce in with the chicken and marinate for 1 hour or overnight for ultimate flavor. *See note for freezer instructions.
  • Place remaining marinade in a jar and store in the fridge.
  • Heat a grill to medium high heat.
  • Once hot, add the chicken and turn to medium heat.
  • Cook for 5-6 minutes and turn over, baste the chicken with the remaining sauce and cook for 5-6 more minutes.
  • Remove from the grill and let rest with tin foil sitting over it (not wrapped in foil) for 3 minutes and then slice and serve.
  • We like ours over rice with freshly steamed or sautéed veggies. Serve with remaining sauce.

To make this dish into a freezer meal, prepare as normal but use a food saver to remove the air or carefully press the air out of a ziploc. The chicken can remain frozen for up to 2 months. Remember to defrost in the fridge and discard any remaining sauce from the uncooked chicken bag.

I feel like Utah summers are way too short. Yes, the stupid snow can be beautiful, but 9 months out of the year!! COME ON! I really am so ready for consistently good weather, but I know it can snow until June so I’m always anticipating more yucky weather popping up during the summer. I made polynesian or grilled Hawaiian chicken thighs last week just to encourage summer to stick around. TAKE THAT UTAH!

Grilled Hawaiian Chicken

K, this chicken is awesome. Love the flavor, love the simplicity, love those grill marks. You could do this in the oven, but why not pull out the grill? We chose to serve ours with a little of the reserved marinade (this never touched the chicken) and we ate it over coconut rice. HOWEVER, anyone and I do mean anyone, can make this chicken. To quote my 5 yr old, “easy peasy lemon squeezy”. So stinkin’ cute.

What Side Goes With Grilled Hawaiian Chicken?

Choose side dishes to complement the light, fruity flavor of the chicken without overwhelming it.

We always do a side of grilled corn because it’s amazing and I think corn on the cob should be eaten as often as possible! Some other suggestions are, broccoli, rice, Hawaiian bread, and fruit.

I would definitely use the chicken thighs over breasts, they are far more flavorful, and definitely take the time to let it marinate. You. Are. Welcome.

  • 1/4 Cup White Onion chopped
  • 1/2 teaspoon Minced Garlic
  • 1 teaspoon Sesame Oil
  • 1 Can Coconut Milk 13.5 oz

Instructions

  • Remove any visible fat from the chicken thighs.
    3 Pounds Boneless Skinless Chicken Thighs
  • Whisk the soy sauce, water, brown sugar, onions, garlic, sesame oil, and coconut milk in a large bowl.
    2 Cups Low Sodium Soy Sauce, 2 Cups Water, 1 1/2 Cups Brown Sugar, 1 Bunch Green Onions, 1/4 Cup White Onion, 1/2 teaspoon Minced Garlic, 1 teaspoon Sesame Oil, 1 Can Coconut Milk
  • Pour 1/2 cup into a jar and reserve in the fridge for serving.
  • Add the chicken thighs to the bowl and marinate the chicken overnight.
  • Heat the grill to high.
  • Add the chicken and turn down to low.
  • Grill chicken at a low heat so that the marinade does not burn for 5-7 minutes per side or until done.
  • Serve over rice with many friends!

Can You Cook Kabobs on the Stove?

You can cook these using outdoor grill or pan-grill on the stove, if  don’t have an outdoor grill.

To cook these kababs on the stove, heat the grill pan to medium.

Cook the skewers for about 6-7 minutes per side, depending on how large the chicken pieces are.

Kabobs or skewers? I call them kabobs but I’ve noticed a lot of people say skewers. It really doesn’t matter, but these Tuscan grilled chicken kabobs do matter. And speaking of things that matter…

The Little Mermaid. Oh boy, this one is hypocritical because my mom is the one that as a little girl told me she didn’t love the movie because she felt like Ariel was a bit selfish. She does sing about wanting more, disobeying her father, choosing to trap herself in an unsafe contract and then choosing to break the rules that her dad made to keep her safe. Now I used to argue that maybe Ariel’s dad was stuck in the darkness and Ariel could see the better life and while she was a tad selfish with never being satisfied with what she had, maybe wanting more was just reaching for more light, knowledge and a better life. In the end though, we just agreed to sit back and enjoy the movie. It’s still one of my favorites because in the end, IT. DOESN’T. MATTER.

Brave. Ugh, I got so tired of this one. In fact, I couldn’t move past what everyone was saying and never ended up loving the movie. Do you remember the push? Girls and women do not need men. Women can save the world and be everything without a man as her happy ending. Gah. I’m tired of this messaging. I think it runs from selfishness and fear. I do need my husband. He’s wonderful, he makes me strive to be better, he helps me be more balanced, he supports each member of the family in different ways but most importantly he offers something to our children I cannot. Men and women are different, but that’s not a bad thing! Our hands are not exactly the same, the are opposites which allows us to perform many things and that’s exactly how men and women should be. No one is perfect, but we should be complimenting each other in our lives instead of competing. We need each other and that doesn’t not make us weak, it makes us stronger.

Tuscan Grilled Chicken Kabobs

Ingredients

  • 2 Chicken Breasts boneless skinless, cut into chunks
  • 1 Red, Green, Yellow, Orange Bell Pepper all hopped in large pieces
  • 1 Red Onion chopped
  • 2 Zucchini sliced

For the Marinade

  • 1 Zest Lemon
  • 1 Tablespoon Lemon Juice
  • 1/2 Cup Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • 1 teaspoon Sugar
  • 2 Tablespoons Tuscan Seasoning
  • Pinch Salt and Pepper

Instructions

  • Mix the marinade in a ziploc bag and add the chicken. Seal and place in the fridge for up to 1 hour.
    2 Chicken Breasts, 1 Tablespoon Lemon Juice, 1/2 Cup Olive Oil, 1 Tablespoon Balsamic Vinegar, 1 teaspoon Sugar, 2 Tablespoons Tuscan Seasoning, Pinch Salt and Pepper, 1 Zest Lemon
  • Remove the meat from the marinade and place on skewers with the veggies, starting and ending with veggies which will help to keep the chicken juicy and tender.
    1 Red, Green, Yellow, Orange Bell Pepper, 1 Red Onion, 2 Zucchini
  • Heat a grill to medium high heat and add the skewers. Turn the heat to medium and cook for about 2-3 minutes per side. The chicken will easily release from the grill when the meat is sufficiently cooked on that side.
  • Remove all skewers and serve immediately.

Notes

reheat in a 400 degree oven for 13-14 minutes, turning halfway
