Hi Britney! I wouldn’t try it in the Instant Pot. There are too many creamy ingredients that wouldn’t hold up well. You can simmer for less time on the stove top. It just won’t have as much depth of flavor. It also works great in the crockpot if you have the time to let it cook all day. There’s a section about how to cook it in a slow cooker in the post. Wow, was this soup ever terrific! I wasn’t so sure with a jar of salsa con queso in it, but it gave it the perfect consistency. I did use an entire 4 ounce can of Hatch hot chile peppers for some extra heat and wasn’t disappointed. Definitely one I’ll be making again (and again).

I saw this tonight and madeit for dinner. I skipped out on the sour cream because I’m not a fan of it. I used fresh cilantro and added black beans. My daughter said to make it again. Thank you.
