Hi Elizabeth! I’m so glad you enjoyed these enchiladas! They are a great meal for freezing and baking later! Proceed with the instructions as written through step 19. Then wrap the pan in plastic wrap and freeze for up to 3 months. When you’re ready to bake them, they can be baked from frozen. You’ll just need to add 10 extra minutes to the baking time, same baking temperature. Add the creamy enchilada sauce and cheese on top right before baking.

I was definitely skeptical about this flavor combination for enchiladas, but they were absolutely delicious. I would like to make them for my parents who are both having health issues. Do you think I could freeze up a pan of them so they can just pop them in the oven when ready to eat? If so, would you recommend I cook them before or just assemble it all? And what temp/ how long should they cook them? Thank you so much!

These were delicious! They will be my go-to enchiladas recipe from now on! Instead of shredded chicken, I used ground turkey, but still used the honey lime sauce on the meat while cooking. I added a little bit of pre-cooked rice to soak up the juice. Thanks for the recipe!
