Hi Wendy! I’m so sorry! After the salt draws out all the water from the zucchini, I just pat the zucchini slices dry with a paper towel. We make this all the time, and I’ve never had a problem with it being salty. It sounds like maybe the zucchini was oversalted.

This looked amazing and I couldn’t wait to try it. It was so incredibly salty even though i did my best to wipe off all the salt on the zucchini and didn’t add any other salt to the recipe. Maybe the directions should say to rinse the zucchini before drying it off and it was missed in the recipe? We were very disappointed and ended up having to eat tuna salad sandwiches instead of this recipe which took a great deal of time and effort to make.

I have been making Zucchini Lasagne for years since My husband prefers to not eat pasta. Can’t wait to try your sauce. I have made with ricotta, Cottage cheese and béchamel. (Not together) Salting and grilling Zucchini really is a key component, much like egg plant. Have you made Moussaka? I bet your sauce would be wonderful in Moussaka.
