How This Recipe Came to Be

Kerri here! This recipe came to life after a trip to a dessert bar shop here in Utah, where one bite of their brown butter Rice Krispie treat had me hooked. I knew instantly that nutty, toasty flavor was the secret, and my brain immediately went to, What if we added dulce de leche? Because around here, if dulce de leche is an option, we’re absolutely using it.

After a little experimenting, these Rice Krispie treats became layered with gooey dulce de leche and built on Carrian’s classic RKT base recipe. She tested them, photographed them, and confirmed what I already knew—they’re next-level good. She even tried a cinnamon sugar Rice Krispies version and now swears by it (which I clearly need to try ASAP).

These dulce de leche Rice Krispie treats have been a hit everywhere I’ve taken them. Every single time, someone asks for the recipe—and now I can just send a link instead of trying to explain how to recreate all that gooey goodness. Trust me, once you try them, you’ll understand the obsession.

Ingredients for Stuffed Rice Krispie Treats

You only need 6 ingredients and about 10 minutes to have these brown butter Rice Krispie treats ready to go! Here is what you will need…

  • Butter: Butter is browned to add rich, nutty flavor and depth that takes these Rice Krispie treats far beyond the classic version.
  • Vanilla Extract: A splash of vanilla enhances the sweetness and rounds out the flavors, adding warmth to the marshmallow mixture.
  • Mini Marshmallows: Mini marshmallows melt quickly and evenly, creating that perfectly gooey texture we all love in Rice Krispie treats.

How to Brown Butter

Browned butter is just butter that has been melted and cooked slightly. It has a delicious nutty flavor. It is super easy to make.

Cut your room temperature butter into similar sized pieces so that it melts evenly. I like to use a light colored pan so I can see the color of the butter and watch it change. Place the pan over medium heat. Stir the butter around to keep it moving while it melts.

As it melts, you will start to see foam and sizzling around the edge and brown flecks will appear on the bottom of the pan. Remove it from the heat immediately. It should be very fragrant. You have made browned butter!

Browned butter can become burned butter very quickly, so remove it from the heat as soon as you see the brown flecks.

Can I Use Regular Butter Instead?

Yes, for sure! If you don’t want that brown butter flavor (we probably can’t be friends…haha…jk!), just add the marshmallows to the butter as soon as it’s melted.

Tips for the Best Rice Krispie Treats

  • Line your pan with a parchment paper or a foil sling so the RKTs are easy to pull out of the pan when they cool.
  • Don’t skimp on the marshmallows or butter. The ratio of butter to gooey marshmallow is perfection and shouldn’t be changed. The result is a soft and chewy and heavenly Rice Krispies treat.
  • Don’t over cook the marshmallows. If they cook too long, they start to crystallize and then when they cool, they will be very hard. Cook over low heat…low and slow! You can also melt the marshmallows in the microwave using 1 minute intervals and stirring in between each 1 minute.
  • Use a huge mixing bowl and a wooden spoon to stir everything together. A large bowl gives you plenty of room to get everything combined well.
  • Don’t skip the extra marshmallows added in at the end. They create little pockets of chewy goodness that you don’t want to miss!
  • I like to spray the bottom of a measuring cup or a rubber spatula with cooking spray to gently press the mixture into the pan. There is no sticking and it makes that step super easy. I also saw a video of someone using the wrapper from the butter to press the mixture in by hand which I thought was genius!
  • I like to use a dough scraper to cut the Rice Krispie treats easily and evenly.

Brown Butter Dulce de Leche Rice Krispie Treats

Instructions

  • Spray a 9×9-inch pan with non-stick spray and line it with a foil or parchment paper sling.  Spray again.
  • Place a large pot on the stove over medium heat, add your butter and let it melt and then brown. *See notes below for browning butter.
    5 Tablespoons Butter
  • Once the butter is browned, remove from the heat and add the salt and 8 cups of mini marshmallows. Stir until everything is completely melted and smooth. If you need to put it back on the heat to finish melting the marshmallows, that is fine. You just don't want the browned butter to burn.
    ½ teaspoon Sea Salt, 10 Cups Mini Marshmallows
  • Once it is smooth, add vanilla and stir again.
    ¼ teaspoon Vanilla Extract
  • Measure out the rice krispies cereal in a large bowl. Pour the melted marshmallows over the rice krispies and mix well.  
    6 Cups Rice Krispies Cereal
  • Add in the remaining marshmallows while still warm.
    10 Cups Mini Marshmallows
  • Lightly press about half of the rice krispies mixture into your prepared pan (see note). Flatten it down so it is even in the pan and then spread the dulce de leche all over the rice krispies in an even layer.
    ½ Can Dulce de Leche
  • Top with the rest of the rice krispies mixture and lightly press it around until it is evenly spread into the pan. Let it set at room temperature until cooled.

Notes

  • We made this batch with Cinnamon Sugar Rice Krispies and it was amazing. If you can’t find them at the store, you could add 1/4 – 1/3 cup of cinnamon sugar.
  • Browning butter: Place a light colored pan over medium heat and add room temperature butter. Stir it gently as it melts. It will begin to foam and sizzle and then you will see little brown fleck forming on the bottom of the pan. As soon as you see those flecks, remove the pan from the heat. 
  • Using a spoon with a little butter on it will help you press the rice krispies into the pan without it sticking all over your hands.
Rice Krispie treats can be stored in an airtight container, at room temperature, for 2-3 days. Or they can be stored in the freezer for up to 6 weeks.

Bringing Snack Friday Back

Every Friday we USED TO do “Snack Friday.” We USED TO be fun. We USED TO have the kids bring all of their friends over after school to devour the delicious treats and snacks.

  1. Combine: Add all the ingredients except the chocolate chips to a medium bowl and stir until combined.
  2. Place in Muffin Pan: Place the oat mixture into the muffin cups lined with paper liners. It will make 8 cups so try to distribute the mixture evenly. Flatten the mixture as much as possible.
  3. Freeze: Place the pan in the freezer for at least 2 hours.
  4. Melt: Place the chocolate and peanut butter chips in a saucer and melt until smooth. Pour a spoonful or two over each oat cup and smooth it out.
  5. Freeze: Sprinkle with flaky salt and freeze for another hour.

There’s not much to this recipe, but it does take some patience. Here are the steps:

  1. Spoon: Measure your yogurt and put it into a container that you can seal with a lid.
  2. Cookies: Stick the cookies into the yogurt so that they are mostly submerged. Try to place the cookies so that they aren’t touching each other so they are covered on all sides by yogurt.
  3. Refrigerate: Let the yogurt with the cookies refrigerate for 5 hours or overnight. Remove from the fridge and enjoy!

Our daughter and her friends make this recipe almost monthly making it a favorite in our household, (except for our famous GOOEY Peanut Butter M&M Cookies). I CANNOT stop eating either one!

  2. Coat the Cereal: Add the cereal to a large bowl and pour the peanut butter mixture over the top. Gently stir until the cereal is well coated.
  3. Powder Sugar It: Let the coated Chex cool a bit and then sprinkle with powdered sugar, stirring to evenly coat the Chex. (If you’re going to try it with cinnamon sugar, this is the point where you’ll add it.) Add more powdered sugar as needed. Let it cool completely before serving (but eat a few bites while it’s warm!)
    • PRO TIP: You can also do this step in a ziploc bag. Add the coated cereal to a plastic bag, add the powdered sugar, seal the bag, and then shake it until evenly coated.

I’m kind of in a meal funk lately. Dinners aren’t the problem though. It’s breakfast and lunch. Which is actually unfair because I’ve always loved breakfast! As a kid I loved something as simple as Cheerios (with more sugar than I care to admit) or as complex as omelets, french toast or muffins.

Nowadays I tend to rotate between eggs, cottage cheese with toppings (see my high protein Cottage Cheese Bowl, or Savory Oats which are a major favorite) protein shakes, or simply avocado toast. But lately…

Lately nothing sounds good and nothing satisfies me.

Anyone else in a rut?

On a whim I threw together these Hot Cocoa Overnight Oats made with a limited edition TruMoo Chocolate Marshmallow chocolate milk and we ended up making them multiple times in a week!

What are Overnight Oats?

Overnight oats are a no-cook breakfast made by soaking raw rolled oats in a liquid, like milk or yogurt, in the refrigerator overnight. The soaking process softens the oats, creating a creamy, chilled dish similar to a pudding or porridge that can be eaten cold in the morning without any cooking. You can also give them a quick zap in the microwave if cold oatmeal isn’t your vibe. They are healthy make-ahead breakfast that are totally customizable to whatever your family loves.

Ingredients You’ll Need

You only need 2 ingredients for this easy overnight oats recipes!

  • Chocolate Milk: Adds rich cocoa flavor and sweetness while making the oats extra creamy.
  • Old Fashioned Oats: Soak up the milk perfectly for a soft, creamy texture that’s never mushy.

  2. Use plain old fashioned rolled oatsNEVER quick oats. Quick oats become very soggy and unappetizing. Also do not use steel cut oats which won’t soften enough, unfortunately.
  3. Warm it up on cold mornings. Although overnight oatmeal is typically served cold, you can definitely eat them warmed. Just place them in the microwave for one minute (make sure it’s microwave safe!)
  4. Meal Prep. Because overnight oats typically last in the fridge for up to 5 days, try making a batch at the beginning of the week so you have breakfast in the fridge for the whole week. Add fruit only on the day you actually eat it.
  5. Milk-to-oats ratio is key! Sometimes the oats don’t absorb or absorb too much. If they look dry on top, add a splash more milk!
  6. Chill for at least 4 hours. The longer the soak time the more the flavors have time to meld together better.

If your oats haven’t softened after soaking, try adding a little more milk or extending the soak time. Make sure you used rolled, not steel cut oats.

For a creamier texture, you can add a little Greek yogurt or try using a milk with higher fat content.

Can I heat up my overnight oats?

In my house, yes! Gel food coloring produces the best color and doesn’t alter the texture of the mints.

Storage and Making Ahead

Once the mints have dried completely, they should be stored in an airtight container in the refrigerator with each layer of mints separated with a sheet of wax paper between them.

    8 oz Cream Cheese, 2 Tablespoons Butter

I start with a spoon and then knead with my hands because it's so thick. 
Only use gel coloring if you can!! The colors are more rich and don't break down the dough.
    Gel Food Coloring
  • Using a small cookie scoop, scoop out about teaspoon sized balls. Roll dough between your palms until smooth. Transfer to wax-paper lined baking sheet. Dip the tines of a fork in powdered sugar and use that to gently but firmly press down on each mint.
  • Allow mints to dry at room temperature for several hours (they should be dried through, so check under the bottoms, then transfer to an airtight container and store in the refrigerator until ready to serve. Store mints in single layers with a sheet of wax paper between them.

  • 3 Tablespoons Sugar
  • 2 Cups Graham Cracker Crumbs
  • ½ Cup Unsalted Butter melted (1 stick)

For the Filling

  • 1 Cup Heavy Cream
  • 10 Ounces Cream Cheese room temperature
  • 6 Ounces Crème Fraîche
  • Cup Confectioners' Sugar sifted

For the Raspberry sauce

  • 2 ½ teaspoons Cornstarch
  • 3 Tablespoons Sugar
  • Cup Water
  • 12 Ounces Frozen Raspberries thawed
  • Fresh Raspberries for garnish

Instructions

  • To make the crust, line 10-12 muffin tins with plastic wrap.
  • In a small bowl, combine the sugar and graham cracker crumbs.
    3 Tablespoons Sugar, 2 Cups Graham Cracker Crumbs
  • Stir in the melted butter.
    ½ Cup Unsalted Butter
  • Divide the graham cracker mixture among the prepared muffin tins.

  • To prepare filling, in an electric mixer fitted with the whisk attachment, beat the heavy cream on medium-high speed until medium-stiff peaks form.

  • Return mixer bowl to mixer, switch to paddle attachment and beat the cream cheese, crème fraîche, and confectioners’ sugar on medium speed until combined.

  • Gently fold whipped cream into the cream-cheese mixture until combined.
  • Spoon filling into crusts and freeze until firm, about 30 minutes.
  • While the cheesecakes are chilling, prepare the raspberry sauce.
  • In a small saucepan, combine the cornstarch, sugar and water.

  • Stir constantly until the mixture boils.

I saw this on Facebook a long time ago and copy and pasted the recipe. It’s been hanging out in the notes on my computer without a source or a title but I decided to try it anyway! And ooooooohhhhh buddy! This sweet cereal snack is irresistible! I cannot keep my hands out of it!

We have yet to go wrong when it comes to cereal snack recipes. Whether it’s a sweet snack mix like our coconut sweet Chex mix or a savory snack mix like our smoked Chex mix, cereal just makes a delicious snack!

Ingredients for No Bake Churro Snack Mix

All you need is a box of Honeycomb cereal, cinnamon sugar and a few ingredients to make a simple caramel. Here is everything you’ll need…

  • Honeycomb Cereal: subtle sweetness with loads of surface area for the cinnamon sugar to cling to
  • Light Brown Sugar: adds sweetness and caramel-y flavor
  • Unsalted Butter: combines with the brown sugar to make the caramel coating for the cereal
  • Light Corn Syrup: helps make the caramel smooth and glossy
  • Vanilla: adds flavor
  • Baking Soda: helps the caramel be soft and smooth
  • Cinnamon Sugar: adds that signature churro flavor and texture

How to Make Churro Honeycomb Snack Mix

Snack recipes should be simple, and this churro snack mix couldn’t be easier! We will make a simple caramel and then toss everything together. Here are the steps…

  1. Prep: Line a baking sheet with parchment paper and pour the cereal into a large bowl.
  2. Make the Caramel: Add the brown sugar, butter and corn syrup to a medium-sized saucepan over medium heat. Stir constantly until the mixture comes to a boil, then let it bowl for a full minute. Remove from the heat and stir in the vanilla and baking soda.
  3. Combine: Pour the caramel over the cereal and toss to combine.
  4. Make the Cinnamon Sugar: Sift the sugar and cinnamon together in a small bowl then sprinkle it over the cereal and toss to coat.
  5. Cool: Transfer the cereal mixture to the prepared baking sheet and allow it to cool completely. Break the pieces up until bite-sized pieces. Store in an airtight container.
    • OPTIONAL: If you want, you can throw the baking sheet into the oven preheated to 350 degrees F and bake for 4 minutes. Toss the cereal and then bake for another 4 minutes. It will make the caramel a little crispier. I made it this way the first few times I made this recipe and then accidentally forgot to bake it one time and actually preferred it a little softer. It’s totally up to you!
